Banana Blossom Vada/Vazhaipoo Vadai Recipe is passed down by my Great Grandmother and is a healthy snack to munch.

Ingredients
  

  • 1 Banana blossom(medium sized)
  • 1 cup Bengal Gram
  • ½ cup Roasted Bengal Gram(powdered)
  • 9 Dry Chillies
  • ½ inch Cinnamon stick
  • 3 Cloves
  • 2 teaspoon Fennel seeds
  • 2 Onion(medium sized)
  • 1 handful Curry leaves 
  • 1 handful Coriander leaves 
  • ½ teaspoon Salt  to taste
  • ½ litre oil for frying

Instructions
 

  • Soak Bengal Gram with dry chillies for 1 hour.
  • Meanwhile clean and prepare Banana Blossom .
  • Ingredients for grinding Vada Batter.
  • In a dry Electric mixer jar add roasted Gram dal ,cinnamon ,clove and Fennel seeds and grind it to fine powder and keep it aside.
  • In the same jar add soaked Bengal Gram little at a time with dry chillies together and grind coarsely without adding water.
  • After grinding dal batter, add boiled Banana florets and pulse twice or thrice.
  • After pulsing the florets has to be minced in this way
  • To the Dal batter add minced Banana Blossom Florets,chopped onion, curry leaves and coriander leaves.
  • Finely add powdered roasted Gram dal with salt to taste.
  • Make equal round balls out of the batter .Make sure not adding even a teaspoon of water.
  • Heat oil in a heavy bottomed kadhai on medium heat and flatten round dal batter to vada shape and fry.
  • Fry Vadai on low medium heat to achieve the utmost crispiness of vadai with golden brown colour.

Notes

Clean Banana Blossom carefully by removing pistil and calyx as it may upset stomach.
Add buttermilk or curd to water and mix well before chopping the Florets.
When grinding BATTER do not add water.
Fry on low medium heat to achieve even colour and crispness.
