Eggless Butterless Banana Bread is an easy ,simple and one bowl recipe to make without any fancy gadgets. This recipe is a no- fail recipe that comes out perfect every time!
Gather all the ingredients and mash over ripe bananas and keep aside.
In a wide bowl add brown sugar and oil and whisk well with a wire whisk.
Add mash banana and vanilla extract to the brown sugar oil mixture and gently mix .
Now add in flour, baking soda and salt mixture to the banana mixture and gently fold until it is evenly mixed.
To loosen the batter add milk and gently fold until it is evenly mixed.
To the batter add chopped flour coated nuts and mix gently. Pour the batter in a greased loaf tin and top with few walnuts .Now the batter is ready to go into oven.
Preheat oven to 180 C and bake for 50 to 55 minutes or until inserted skewer comes out clean. Slice it and serve with cuppa of coffee or milk.
Notes
Use only over ripe Bananas ,which is high in sugar content and for it’s beautiful Banana flavour.You can skip Vanilla extract ,if you are satisfied with only banana flavour.If you do not have brown sugar, swap with granulated sugar with the same quantity.You can swap milk with warm water too.It takes 50 to 55 minutes in my oven to bake. Every oven behaves different, so have an eye after 40 minutes.When you store on kitchen counter, store it in an airtight container(it should be completely cool).It stays fresh for two days.You can freeze Banana bread as loaf or as slices in a cling wrap or aluminium foil. It stays fresh for months. Thaw in fridge or at room temperature before consuming.
