Equipment

Ingredients

  • 4 cup all-purpose flour
  • 2 tablespoon caster sugar
  • 100 gm unsalted butter
  • 300 ml milk
  • 2 teaspoon baking powder
  • ¾ teaspoon salt
  • 1 egg ( for egg wash )
  • 4 tablespoon milk (for milk wash )

Instructions

  • Gather all the measured ingredients .
  • Sieve all the dry ingredients in a wide dry bowl.
  • Now add cold chopped butter to the dry ingredients.
  • Gently rub cold butter to the flour with your clean palm.
  • Add cold milk to flour butter mixture and gently mix with a fork.
  • Now gently mix the flour mixture with fork.
  • Sprinkle all purpose flour on to the clean kitchen counter and transfer the scone dough. Gently roll or pat the dough to rectangle shape ( do not worry about the shape)
  • Using a round cutter press the dough gently and arrange on a baking tray. Now with a silicon brush ,egg wash or milk wash top of the scone . Preheat oven to 190°C and bake the scones for 15 to 18 minutes.
  • Baking times vary with different ovens so, have an eye when baking. When the scones are done ,you can check it in two ways. Firstly, the scones will be easily pulled off from the baking tray. Secondly, the scones are well baked and no longer doughy inside.
  • Serve Scones with clotted cream or jam and butter. I prefer to have with butter and jam.

Notes

Avoid using food processor. Clean palm is the Best food processor for mixing the Scone dough.
Avoid over – mixing the dough . Too much mixing results to hard dense scones.
Scones can be of any shapes . Let your creative hands play with the dough without over – mixing.
Flour your hands when shaping the dough to maintain the shape of the scone.
Gently roll or pat the dough and do not try to compress to a proper round shape. This helps Scones to rise and gives a crumbly texture.
If you are adding add-ons  like chocolate ,fruits or other sweet ingredients to the basic scone recipe, use less sugar.
