These Brookies are decadent with a crispy top and cakey inside. No one can stop eating one and asks for more. It is an easy recipe to whip in few minutes.

Ingredients
 
 

  • 185 gm semi sweet chocolate
  • 150 gm caster sugar
  • 100 gm butter ( unsalted butter )
  • 2 eggs
  • 3 tablespoon cocoa powder ( unsweetened )
  • 175 gm all-purpose flour
  • ½ teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • icing sugar ( for dusting the cookies )

Instructions
 

  • In a microwave-safe bowl, add butter and semi-sweet chocolate and melt it for 10 to 15 seconds until it turns smooth and shiny. You can follow double boiler method for melting chocolate and butter.
  • Stir well until you do not find any chunks of chocolate. Let it cool.
  • Meanwhile beat egg and sugar until frothy. and sugar is completely dissolved.
  • Now add cooled chocolate to the egg mixture, vanilla extract and whisk well for a minute until it is well combined.
  • Sift (all-purpose flour, coca powder, baking powder and salt ) in the dry ingredients and gently fold until just combined.
  • Mix it gently with a spatula until the flour mixture combines well. Initially, the dough mixture will be slightly thin. Just leave the brookies dough for 15 to 20 minutes on the kitchen counter. The dough will start to thicken and, you can handle the brookie dough well.
  • Meanwhile, preheat the oven to 180 C. Use a cookie scoop to get an evenly sized ball. Place it on a non-stick baking tray and bake it for 13 to 14 minutes.
  • Do not bake for more than 14 minutes. The cookies will be soft from out of the oven. Allow them to cool on the baking tray until it is completely cool. Then remove from the tray and transfer to a cooling rack and serve with a cup of milk or coffee.

Notes

Use good quality chocolate and cocoa powder. I used semi-sweet chocolate and, if you are a great fan of dark chocolates, you can use that too.
If you want to bake immediately and have no time to wait, you can refrigerate the brookie dough for ten to fifteen minutes for the dough to thicken.
