Ingredients
  

  • 6 cups rice (freshly cooked)
  • 1 Red Bell pepper 
  • 1 Yellow Bell pepper
  • 1 green bell pepper
  • 1 onion
  • 8 garlic cloves
  • 3 tablespoon schezwan sauce
  • 1 tablespoon pepper powder ( freshly ground )
  • 4 tablespoon oil ( vegetable oil )
  • salt ( to taste )
  • spring onions ( half bunch )
  • coriander leaves ( for garnish )

Instructions
 

  • Pressure cook rice. Tips on how to pressure cook is given in the step-by-step preparation. Kindly read it without fail.
  • After the said time, switch off the heat. When the steam settles down, transfer the cooked rice onto the plate and spread until the rice cools down completely.
  • Add oil to a wok or any wide pan on medium heat. Add finely chopped garlic and sliced onions and saute well.
  • After sauteing for a minute or two, add sliced bell peppers and cabbage on high heat. High heat cooking helps bell peppers to maintain their crunchiness.
  • Now add salt and store-bought schezwan sauce and gently mix the vegetables with a spatula.
  • Add freshly ground pepper and pre-cooked rice and mix gently or toss it if you are an experienced cook. All cooking has to be done on high heat.
  • Finally, garnish it with spring onions and coriander leaves. That’s it! Restaurant-style schezwan fried rice is ready to be served.
  • Serve piping hot schezwan veg fried rice with any Manchurians as a side. I served scrambled eggs as a side to the rice.

Notes

Cook any aged long grain or medium rice. Aged rice always has less starch and does not be mushy. Follow the tip mentioned on how to cook rice in a pressure cooker for fried rice. Using vinegar is optional, but it adds a slight punch to the fried rice. Rice vinegar is the best choice than other vinegar varieties. Use any oil with a high smoke point.
