Coconut Rice/Nariyal Chawal(South Indian Style)

Ingredients
  

  • 3 cups Cooked Rice Precooked or leftover rice
  • ¾ cup Fresh grated coconut
  • 1 Cashew nuts handful
  • 2 tablespoon Ghee 
  • 3 Dry chillies
  • 1 teaspoon Mustard seeds 
  • 1 teaspoon Urad dal
  • 2 teaspoon Bengal gram 
  • ¼ teaspoon Asafoetida
  • 2 Curry leaves  sprig

Instructions
 

  • In a kadhai heat ghee on a medium heat.
  • Add urad dal,bengal gram ,mustard seeds,dry chillies and cashew nuts and fry on low medium heat.
  • Fry until, it turns golden brown.Now add asafoetida and fry for few seconds.
  • Add grated coconut and fry for a minute and finally add curry leaves and salt to taste and switch off heat. 
  •  Add salt to taste and curry leaves and mix well. Coconut rice mix is ready to mix in precooked rice or leftover rice.
  • In a dry bowl add rice and coconut mixture and gently mix with rice until it is well combined.
  • Serve Coconut rice /Nariyal Chawal/ South Indian Style with any crispy sides ,gravies ,curries or as it is. It’s a comfort whole meal for all ages and kids love to eat with no fuss. 

Notes

Cook rice grainy not mushy. Use Fresh Coconut not frozen. Add any nuts according to individuals choice. Adding Ghee enhances the flavour of Coconut rice.
