Easy Moist Coffee Cake is a delicious simple sponge cake as it is. It all needs basic cake ingredients with addition of good quality instant coffee powder /granules.
In a pan add water, sugar (I Powdered granulated sugar in a mixer grinder) and instant coffee powder powder/granule and mix well until it is well combined.
Heat the mixture until it starts to boil and remove from fire. Keep it aside to cool.
Meanwhile ,sieve all purpose flour and baking powder at least thrice and keep it aside.
In a wide dry bowl beat egg white till stiff and peak and keep it aside.
In another dry bowl beat butter and egg yolks until pale and creamy.
Now add in cooled coffee mixture and gently mix.
Stir in sifted flour and gently fold with a spatula.
Fold egg whites into the mixture gently in two to three batches until it is well mixed.
Transfer the cake batter to a greased pan and level the cake batter . I used one 7″ round springform pan and five cup cake moulds.
Bake in a preheated oven at 180 °C for 40 to 45 minutes or inserted skewer comes out clean.

Notes
Use instant coffee powder/granules for both cake and coffee sauce.You can use any pans or tins for making this cake .I used 7″ inch pan and 5 cup cake liners for this measurement. You can use one 9″ pan .
