Easy spicy potato fry is a quick dish to prepare in just a few minutes. Who says no to potatoes. From toddler to aged person, all would love to eat without any fuss.
4tablespoonoilsunflower oil or canola oil (purely optional)
1teaspoonmustard seed
1teaspoonurad dal
1teaspoonbengal gram
1teaspoonfennel seed
¼teaspoonturmeric powder
1tablespoonchilli powder(add according to your taste)
½teaspoonsalt(salt to taste)

Instructions
Firstly boil potatoes and peel the skin and keep it aside. In a wok add oil on a low medium heat. To it add mustard seed, urad dal, bengal gram and fennel seed and wait until it starts to crackle.
Add chopped onion, green chillies and curry leaves and saute until it turns translucent.
Now add chopped tomatoes and continue to saute until it is mushy.
Add, turmeric powder, chilli powder and salt to taste and mix well until it is combined well.
Add chopped boiled potatoes and gently mix and make sure the potatoes are well coated with spicy masalas.
Roast the potatoes until it turns crisp on the edges. However, if you want more crispy, you can roast extra few minutes on low heat.
Easy spicy potato fry is ready to devour with any variety rice, rotis, sambhar rice, rasam rice and the list is endless.
Notes
You can boil potatoes or cut into small cubes.You can add chilli powder or Homemade Sambhar Powder for the spicy potatoes. Adding masala is purely optional.If you’re like south Indian masalas, try only chili powder or sambhar powder. Adding garam masala powder or chat masalas will give a different taste.
