Cauliflower egg fritters/ Gobi anda fritters is an easy and quick dish to make. It is an easy appetizer to prepare within few minutes. All you need is simple ingredients available in your pantry.
Clean and cut cauliflower as shown in the picture.
In a wide pan, add enough water with turmeric powder and salt to taste. In the boiling water, add cauliflower florets and blanch them for two to three minutes.
The cauliflower should not be overcooked. Now drain the water in a colander.
Meanwhile, in a bowl, add eggs, freshly ground peppercorns, chilli powder, and salt to taste( add salt to salt). Beat the eggs until the spices are combined.
Add blanched cauliflower to the egg mixture and mix well.
In a wide pan add oil on a low medium heat. Pour the cauliflower mixture gently and let it cook for five minutes.
After few minutes, gently flip it and cook it for three to four minutes.
When the egg and cauliflower combine and cook to perfection, switch off the flame. Separate individual cauliflower egg pieces gently with a spatula.

Notes
Blanch cauliflower for only three to four minutes. Do not overcook! Add spice according to your taste. Also, you can add more eggs as per your wish.
