Ingredients

  • ¾ cup All-purpose flour
  • 1⅓ cup Sugar
  • ½ cup Butter
  • 4 Eggs
  • 7 oz Semi-sweet baking chocolate (200 gm)
  • 1¼ cup Andes mints (Broken into halves and reserve a few to scatter on top of the brownie batter)
  • ½ cup Semi-sweet chocolate chips (Reserve a little to scatter on top of the batter)
  • 1 teaspoon Vanilla extract
  • ⅛ teaspoon Salt

Instructions

  • Preheat the oven to 180°C (350°F). Line your baking pan with parchment paper.
  • Melt the baking chocolate and butter together in a pan over low heat, stirring until smooth. Remove from the heat and allow it to cool slightly.
  • Add the sugar and mix well.
  • Add one egg at a time to the chocolate mixture, beating on low speed until fully combined.
  • Stir in the vanilla extract.
  • Add the all-purpose flour and gently mix until just combined. Do not overmix.
  • Add the chocolate chips and gently fold them into the brownie batter. Reserve some chocolate chips to scatter on top of the brownie batter.
  • Fold the broken Andes Mint pieces into the batter so that the chocolate and mint flavour are distributed throughout the brownies. Reserve the whole pieces to scatter over the brownie batter.
  • Pour the brownie batter into the prepared, parchment-lined baking pan and spread it evenly.
  • Scatter chocolate chips and whole Andes Mint pieces over the batter.
  • Bake at 180°C (350°F) for 35 to 40 minutes, or until a skewer inserted into the centre comes out with a few moist crumbs.
  • Remove from the oven and allow the brownies to cool completely in the pan.
  • Once cooled, lift them out using the parchment paper and cut into squares.

Notes

Check the brownies around the 35-minute mark. A skewer inserted into the centre should come out with a few moist crumbs. Avoid overbaking to keep the brownies fudgy.
