Prevent your screen from going dark
Instructions
Weigh caster sugar and dark brown sugar. Here brown sugar is essential for these chocolate chip cookies.
Add the caster and dark brown sugar to a food processor. Pulse it for a few seconds and grind to a fine powder and keep it aside.
Add the ground sugar and unsalted butter (room temperature) to a bowl.
Beat butter and the sugar until creamy consistency for 2 to 3 minutes on a medium-high speed. I use an electric hand beater to cream it. You can use a whisk to beat the butter-sugar mixture.
To the mixture, add an egg and beat for thirty seconds until it is well combined.
Sieve all-purpose flour, salt, and baking soda into the mixture and fold it gently with a spatula.
Add a teaspoon of vanilla extract and gently mix the cookie dough.
Add in dark chocolate chips and mix gently.
The chocolate chip cookie dough is ready. Wrap the bowl with cling film and chill the cookie dough for 15 to 20 minutes. Chilling helps to hold the shape of the cookie.
Preheat the oven to 170 C. Now scoop the cookie dough into equal parts on a greased baking tray or non-stick tray as I use for baking.
Bake the chocolate chip cookies for only 11 minutes or until light brown (the centre will be soft). Cool for 2 to 3 minutes and remove from the cooking tray to the cooling rack. Cool completely, and then store in an airtight container.
Serve the chewy chocolate chip cookies with a cuppa of chilled milk or devour as it is. I love to eat immediately straight out of the oven.
