This chewy chocolate chip cookie recipe is the best cookie recipe ever! It is a simple, amazingly decadent, and straightforward recipe that turns out perfect every single time!

Chewy chocolate chip cookies are buttery, soft, chewy, and deliciously decadent. Every morsel of this buttery cookie with bits of chocolate chips in between is heaven. Among cookie lovers, this chocolate chip cookie will be an all-time favourite cookie.

This cookie recipe is one of my favourite cookie recipes ever. I have been making these for many years. It is a straightforward recipe to bake with regular cookie ingredients plus chocolate chips.

Why I love this cookie?

Firstly, it is a chocolate chip cookie, so that’s it๐Ÿ˜‚. Who doesn’t love chocolate? Also, the soft, chewy, and crispy outside of the cookie is my choice.

Secondly, it is an easy one-bowl cookie recipe to make without a mess.

Thirdly, you can make the cookie dough ahead and freeze for many months, and bake it whenever you need it. So it is a perfect cookie to bake at any time, on holidays or occasions.

Finally, you can mix any dried fruit and nut with chocolate chip cookies.

FAQ’s

What makes a cookie moist and chewy?

Egg yolks have more fat than egg whites, which helps to keep your cookie soft and chewy. You can skip the white of each egg and replace it with an additional egg yolk. I add a whole egg to have crunchy edges and are chewy and moist in the centre of the cookies.

Why do we add brown sugar to the cookie?

Also, brown sugar with white sugar gives you the colour and chewy cookie.

How should I store the cookies after baking?

Firstly, let the cookie cool completely. Then store in an air-tight container at room temperature for 3 to 4 days or store in the fridge for 2 to 3 weeks.

Can you freeze the cookie?

Yes, you can store it in a zip lock bag. Before serving, thaw the cookies at room temperature and microwave them for a minute.

Variations for chewy chocolate chip cookies

  • You can add nuts along with chocolate chips. Any favourite nuts are purely your choice.
  • A combination of chocolate chips and bar chopped chocolate bar gives a nice texture to the cookies.
  • You can add chopped dried fruits of your choice to the cookies.
  • White chocolate chips with chocolate chips are a beautiful combo for these cookies. It gives a beautiful color to studded cookies.
  • You can use brown sugar or dark brown sugar with regular white sugar. If you want your cookies to be chewier, skip white sugar and use only brown sugar.

Let’s jump to the step-by-step preparation of chewy chocolate chip cookies.

Weigh caster sugar and dark brown sugar. Here brown sugar is essential for these chocolate chip cookies.

Add the caster and dark brown sugar to a food processor. Pulse it for a few seconds and grind to a fine powder.

Keep it aside.

Add the ground sugar and unsalted butter (room temperature) to a bowl.

Beat butter and the sugar until creamy consistency for 2 to 3 minutes on a medium-high speed. I use an electric hand beater to cream it. You can use a whisk to beat the butter-sugar mixture.

To the mixture, add an egg and beat for thirty seconds until it is well combined.

Sieve all-purpose flour, salt, and baking powder into the mixture and fold it gently with a spatula.

Add a teaspoon of vanilla extract and gently mix the cookie dough.

Add in dark chocolate chips and mix gently.

The chocolate chip cookie dough is ready. Wrap the bowl with cling film and chill the cookie dough for 15 to 20 minutes. Chilling helps to hold the shape of the cookie.

Preheat the oven to 170 C. Now scoop the cookie dough into equal parts on a greased baking tray or non-stick tray as I use for baking.

Bake the chocolate chip cookies for only 11 minutes or until light brown (the center will be soft). Cool for 2 to 3 minutes and remove from the cooking tray to the cooling rack. Cool completely, and then store in an airtight container.

Serve the chocolate chip cookies with a cuppa of chilled milk or devour as it is. I love to eat immediately straight out of the oven.

  • 40 g caster sugar
  • 100 g Butterย  (unsalted)
  • 1 egg
  • ยพ cup dark chocolate chips ( you can use ยฝ cup to ยพ )

  • 1 tbsp vanilla extract
