Quick Coffee Cookies/Simple Coffee Cookies(Eggless) is an One Bowl Cookie Recipe! The word Coffee itself refreshes a person from a dull mood to Jumping Jack mode. Yes, all True coffee lovers will go by my words! I love coffee from my childhood, Which I already said in my previous blog post. So no more grinding back the old stories! Let me share how this recipe added in my favourite Bake Diary after some tweaks.
I’m from South India and I love Filter Coffee which is one of the famous beverages of South Indian States. So I tried to incorporate filter coffee into my favorite cookies. Adding thick decoction to the cookie dough did not give me a strong coffee flavor. So, I tried it with instant coffee powder and the outcome was so aromatic and I stick to the same recipe every time, and thus it is one of my favorite cookies in my Bake Diary.
How to make Quick Easy Simple Coffee Cookies(Eggless)
This Coffee Cookies recipe is so quick, easy, and simple and made with few ingredients, which is readily available in your kitchen. The texture of the cookie is crispy outside and slightly chewy inside. I always bake two types of Coffee cookies, one chewy inside, and full crispy cookies. Let’s see the step by step preparation of this easy cookies!
Firstly, preheat oven to 180 C and measure all the ingredients. Make sure all the ingredients are at room temperature and mix Instant coffee powder with 3 tablespoon of warm water.
Secondly, in a wide bowl add sugar and butter and whisk well in an electric hand mixer until it is creamy. To it add Instant coffee mixture and beat on low speed.
Finally, sift all purpose flour, salt, and baking powder together into the coffee butter mixture.
Beat it on low speed until flour mixture is well combined and soft dough.
The Coffee Cookie dough is ready to shape according to your preference. At this stage, you can add any nuts, dry fruits, or chocolate chips and mix to the dough. I love chocolate and so added my childhood favorite Gem chocolate. This dough is no need to refrigerate and can bake immediately.
Make an even sized ball out of the coffee cookie dough and place individual Gem chocolate and gently press as shown in the picture.
Place into the preheated oven and bake for 12 to 15 minutes until the base turn golden brown.
Once done remove from the oven and allow to cool on the tray for 5 minutes. Serve the cookies warm or allow it to cool completely and store it in an airtight container.
If you prefer chewy cookies, bake for fewer minutes(say 13 minutes) and remove it from the tray immediately from further baking. Or else, it starts to turn crisp cookies.

Notes
Use good quality Instant Coffee powder for this cookie recipe. Dissolve Instant Coffee powder in warm water(3 Tbsp)before adding to the cookie dough. Always use room temperature ingredients. You can bake this cookie crisp or chewy by adjusting time. Store cookies in an airtight container on the counter for a week or in Fridge for up to months. You can mix cookie dough and store it in a freezer for two to three months. Thaw the cookie dough before baking. You can add choco chips, nuts, dry fruits, or store-bought chocolates to the cookie dough for extra richness or you can bake as it is.
