Substitutes
- Water – If you want to give your cake a fruity taste, you can replace the water with fruit juice. For example, if you are making an apple cake or an orange cake, you can use apple juice or orange juice instead of water. However, keep in mind that the amount of sugar you add may need to be adjusted as fruit juice already contains natural fructose which is sweet. Therefore, the ratio of sugar to juice will vary depending on the type of juice you use.
- Sugar – You can substitute white sugar with stevia, cane sugar, demerara sugar or raw sugar for a richer flavour due to the presence of molasses and micronutrients.
- For recipes such as Baklavas or Basbousa, you can use equal parts of sugar and honey to make the syrup.
Variations
- Spices – Infusing cinnamon, cloves, and cardamon into sugar syrup can enhance the flavour of desserts and drinks.
- Herbs – Rosemary, Basil, and Mint pairs well with sugar syrup, and a teaspoon of herbed sugar syrup can enhance the aroma of any drink.
- Flowers – The addition of rose petals, lavender, carnation, and tulip flowers produces aromatic floral sugar syrup, which is commonly used in desserts and beverages.
- Extracts – Adding extracts like vanilla, orange, lemon, ginger, etc to the sugar syrup is perfect for desserts and drinks.
