“Basic Vanilla Cake, also known as Easy Vanilla Cake, is a moist and fluffy tea cake that’s perfect for all seasons. This beautiful and simple cake is loved by everyone and makes an ideal tea time treat, perfect for picnics or as a gift for any occasion.”

This is the basic sponge where you can play with the flavours of your choice according to your Palate. Here I have added vanilla flavour and made it a simple Tea time Cake.

I’m not a big fan of frosting a cake but occasionally frost with Butter cream, whipped cream and Chocolate ganache. If I do frost , I fill the layers with Italian Butter cream ,Jams, fresh fruits or fruit compote.

Here I have doubled the recipe,Beginners give a try by half the measurements and reduce the time. I Baked in Microwave CONVECTION OVEN and it took almost 50 minutes to bake. Lets see the step by step preparation of the recipe, Guys do try and let me know your feedback in comments. Over to the recipe!

How to make vanilla sponge cake step by step preparation

Get ready with all ingredients measured and at room temperature. Preheat Microwave convection oven to 170°C.

Sieve All purpose flour and Baking powder together thrice and keep it aside. Beat eggs very light and frothy in an electric hand mixer.

In a dry bowl cream butter and powdered sugar with Vanilla extract in an Electric hand mixer.

To the creamed butter sugar mixture add beaten egg mixture to it and mix in a ballon whisk.

Now add sieved All purpose flour and baking powder to the wet mixture in three parts by adding milk little at a time and fold the mixture gently until the batter attains dropping consistency.

Grease a 7 ″ round pan and dust all purpose flour twice and remove excess flour and line the base with parchment paper . Transfer cake batter to the pan and tap all around the sides to even the batter.

Bake on 170 °C for 45 to 50 minutes or until skewer inserted into the middle comes out clean .

Once the cake is done, place it on a cooling rack for 15 minutes and unmold cake from pan and remove parchment paper.

Cut the cake into half and slice as per your wish. I usually prefer slices to have with a cup of Tea or Coffee.

Do not open the oven door during the first 20 minutes ,the temperature falls suddenly and cake will not rise properly and may collapse in the centre.

      Hi Sai,
      Approximately 1 cup flour is 120 gm to 122 gm. while measuring flour use a knife to level the flour.
      1 cup butter is 225 gm and sugar will be 199 gm to 200 gm. All the best and do share your feedback after baking????

      Hi Jamshinissam,
      As per the recipe it is 230 gm butter, if it is oil reduce to 160 to 170 ml..if you feel the cake batter is thick try to add 5 to 10 ml.I have already posted an Eggless Butterless cake recipe…you can try if you want https://platetopalateblog.com/?p=1328…

      Hi Famida,
      You can use salted butter if unsalted butter isn’t available,but check the sweetness of the cake batter and if needed increase 5 to 10 gm of powdered sugar.I have already shared an Eggless Butterless cake recipe in the blog https://platetopalateblog.com/?p=1328 click the link for the recipe.

      Hi Mary,
      Bake at 170 C for 40 minutes and check by inserting a skewer if cake is done. If it is wet inside ,do bake for 5 to 10 more minutes until it is well baked. Every oven is different so,keep an eye after 35 minutes. Happy baking????.

      Powdered sugar is nothing but granulated sugar blended in an electric blender. Icing sugar is used for frosting the cake.

      I think you can bake. Let me give you the loaf pan in inches, which I’m used of….(8*4-inch size) would be perfect.
