Fresh Strawberry Cake Recipe/How To Make Easy Strawberry Cake

This Fresh Strawberry Cake is soft, buttery, and sinfully delicious with chopped fresh strawberries in the cake. The texture of the cake is moist, with beautiful crumbs. Tiny bits of fresh strawberries embedded in the cake add a pretty look to the cake. Every bite burst out both fresh strawberry and added vanilla flavour. It is an easy one-bowl cake recipe even a novice baker can nail it.

To make this strawberry cake to the next level, I have frosted it with simple whipping cream with a hint of rose gel and confectioners (icing) sugar. It is purely optional. Buttercream frosting goes well but, I’m not a great fan of buttercream and also my family. I always love plain cake with a cup of coffee. This Fresh Strawberry cake is for my Hubby’s birthday which, falls on the same month as Valentine’s day. So it has to be something special for him. So the cake is frosted in a semi-rustic look.

How To Make Fresh Strawberry Cake

This fresh, easy strawberry cake is made with regular cake ingredients

  • all-purpose flour
  • egg
  • butter
  • sugar
  • baking powder
  • milk
  • vanilla essence
  • Fresh strawberries.

For Icing

  • Non dairy whipping cream
  • rose colour gel
  • icing sugar

Lets see step by step preparation of fresh strawberry cake recipe/Easy strawberry cake.

In a wide bowl beat room temperature butter and powdered granulated sugar together until it forms smooth creamy mixture.

To it, add room temperature egg and beat well. Make it a note, add one egg at a time, and beat on low speed.

To the wet ingredients, sieve al-purpose flour and baking powder together directly and beat until it is well combined.

To the cake batter add milk to loosen the batter.

Add 3/4 tsp of vanilla extract and fold the batter gently using the cut and fold method.

Finally, add in luscious chopped strawberries to the cake batter and mix until it is evenly distributed in the batter.

Meanwhile preheat oven to 180 C (356F). Grease the mould with butter and line with a parchment paper. Transfer the cake batter to a square cake mould (20.3 *20.3 * 7.6 centimeters).

Gently smoothens the surface with a spatula and tap the tray on the kitchen counter to get rid of air bubbles in the cake batter.

Bake it in the preheated oven to 30 to 35 minutes or until inserted skewer comes out clean.

Transfer it to a cooling rack and gently remove the parchment paper.

Let it cool completely.

Simple Whipped Cream frosting

In a clean dry bowl add 1 cup non dairy whipping cream(ice cold) and whisk on medium-high speed until it starts to thicken. Now add 1 tbsp of icing sugar( confectioners sugar) and whisk until soft peaks form. Add in a little pink colour gel and whisk until stiff peaks form

The simple whipped cream frosting is ready to frost the cake. If you wish, you can add flavours to the frosting.

Frost the cake with whipped cream frosting and garnish with sliced strawberries and mint leaves.

Serve the cake slice with a cup of coffee or milk for a snack or dessert. I prefer to have the cake without frosting with a cup of coffee.

How To Store The Cake

Store the cake in the refrigerator for three to four days. Finish it off early as fresh strawberries are in it.

Ingredient Substitution For Fresh Strawberry Cake Recipe

You can substitute any berry or stone fruit for this recipe.

If you are intolerant to dairy products, try with vegan butter and almond milk.

You can try this recipe with whole wheat flour or gluten free flour too.

If square tin is not available, you can use 9 inch round pan for the measurement.

Notes

All the ingredients should be at room temperature. Measure granulated sugar and then powder in a mixer grinder. If square tin is not available, use a 9 inch round pan for this measurement. Use whole fat milk to achieve the richness in taste and golden brown colour of the cake. Every oven behaves differently, so have an eye after 20 minutes.

    How much is 0.7 cup of butter

      There are two tab for measurements. One is US Customary and the other is Metric measurements. If you use weighing scale click the metric tab. Well, 0.7 cup will be approximately 12 tbsp. Happy Baking!

    Can you use ready made powdered sugar instead of granulated sugar ground sugar? And how much would you use?

      Don’t use confectioners sugar for any cake. It has little amount of corn starch powder in it and the texture of the cake will be different. You can use caster sugar with the same quantity as I mentioned in the recipe.
