Easy Moist Coffee Cake is a delicious simple sponge cake as it is. It all needs basic cake ingredients with addition of good quality instant coffee powder /granules .
You can bake coffee cake either in round pan, loaf tin etc . I prefer to bake in round pan as , I LOVE to see the dripping coffee sauce on the cake . Being a coffee lover , I did not go for any butter cream or whipping cream frosting . Instead , I opt for simple coffee sauce for my moist coffee cake. This Coffee sauce makes magic to the moist coffee sponge cake for, both eyes and palate.
If you know to make a perfect coffee sauce .you can do wonders in baking by incorporating coffee flavours. The coffee sauce recipe is so simple and even a novice baker can nail it. I will be blogging how to make coffee sauce as a separate blog post in Condiments category .
Why I love Easy Moist Coffee Cake?
If you are my regular blog visitor,you would know my love for coffee! In my childhood ,I refuse to drink milk and my Amma used a trick by adding few drops of brewed coffee in milk . And ,I used to drink happily without any fuss. This is how my love for coffee started when I was a toddler.
I’m not a sweet tooth , I eat cake moderately either without frosting or with minimal frosting . But ,I love this coffee cake recipe as both the sponge and sauce are packed with coffee flavour. Coffee is one of my weakness and , I could not resist this coffee cake for any reason???? I really have a hard time after baking coffee cake as it vanish in no time. The only way to control myself is baking this flavour occasionally.
Can I use freshly brewed coffee?
A big No to freshly brewed coffee . I always use instant coffee powder or granules (mixed in water) for this cake and coffee sauce. It is the easiest way to achieve the intense coffee flavour into both sponge and sauce. You cannot substitute the coffee powder/granules for ground coffee bean. I have not tried so far, if anyone try do drop me the feedback in comment and I would love to hear from you guys.
How to bake Easy Moist Coffee Cake?
Sieve all purpose flour and baking powder together and keep aside. In a pan add instant coffee powder/granule,sugar and water and bring it to boil until sugar it is completely dissolved . Let it cool . Meanwhile prepare 7″ round cake tin with butter and dust with flour and keep it aside. Separate egg yolk and egg whites. Beat egg white till stiff and keep aside.
Now beat egg yolk in a separate wide bowl until pale and creamy. To it add cooled instant coffee mixture and mix well. Add sifted flour to the coffee mixture . Now add beaten egg white in two batches and gently fold until it is well mixed. Transfer to a greased pan and bake in a preheated oven at 180 °C for 40 to 45 minutes or until inserted skewer comes out clean. Moist Coffee Cake is ready to devour as it is.
How to make Coffee Sauce?
Boil ½ cup water with sugar, instant coffee powder/granule and little butter .Mix well on low heat for two yo three minutes until sugar is completely dissolved. Now, add cornflour paste to the coffee mixture and stir until it coats the back of spoon or ladle with a glossy look. Easy coffee sauce is ready to coat on to the cake.
How to Store Easy Moist Coffee Cake?
You can store moist coffee cake in an airtight container for two to three days on kitchen counter. In fridge ,it stays good for four to five days . Bring it to room temperature and top with coffee sauce before eating this delicious decadent cake .
Lets jump to the step by step preparation of easy moist coffee cake preparation.
Gather all the ingredients at room temperature.
In a pan add water, sugar (I Powdered granulated sugar in a mixer grinder) and instant coffee powder powder/granule and mix well until it is well combined.
Heat the mixture until it starts to boil and remove from fire. Keep it aside to cool.
Meanwhile ,sieve all purpose flour and baking powder at least thrice and keep it aside.
In a wide dry bowl beat egg white till stiff and peak and keep it aside.
In another dry bowl beat butter and egg yolks until pale and creamy.
Now add in cooled coffee mixture and gently mix.
Stir in sifted flour and gently fold with a spatula.
Fold egg whites into the mixture gently in two to three batches until it is well mixed.
Transfer the cake batter to a greased pan and level the cake batter . I used one 7″ round springfoam pan and five cup cake moulds.
Bake in a preheated oven at 180 °C for 40 to 45 minutes or inserted skewer comes out clean.
