Eggless WholeWheat Black Grape Cake

Eggless Whole Wheat Black Grape Cake is my new addition to the Healthy Corner Category. I’m a passionate home baker and loves to incorporate different flavours and fruits in my baking. I almost used some common fruits like apple,orange, banana,strawberry etc in my earlier baking. I was little intimidate to try with grapes , but made up my mind and gave a try . However ,my try is a sweet success and will be trying more recipes on this fruit. This Eggless wholewheat cake is moist,soft with beautiful crumbs and my family thoroughly enjoyed it.

I want to make this cake on a healthier version by using whole wheat flour,brown sugar and oil. To be honest ,I prefer all purpose flour for my bakes and always skeptical using whole wheat flour for baking cakes . It is not that I have not used whole wheat flour for cakes or Breads but , I personally prefer All purpose flour for cakes and whole wheat flour for breads . This wholewheat eggless cake is moist,soft with beautiful crumbs and delectable to consume. This cake has no butter and substituted with oil and milk ,which I have already used in my earlier cakes Eggless Butterless Chocolate Cake.

How to bake Eggless /Wholewheat /Black Grape Cake?

This is a simple cake which needs only a bowl and a whisk to mix all the ingredients to make the cake batter. Firstly sieve Whole wheat flour,Baking soda and salt together and mix brown sugar and keep it aside. Secondly, in a wide bowl, add milk, oil,vanilla extract and vinegar and mix well. Now add dry ingredients to the wet ingredients and gently fold by add flour coated Black grapes. Transfer the cake batter immediately to the mould and bake at 180 C for 40 minutes or skewer inserted comes out clean. Lets jump to the step by step preparation of Eggless Wholewheat Black Grape Cake.

Preparation Time : 10 mins

Baking Time : 35 mins

Servings : 8

Mould : Silicon mould (any pan can be used)

Ingredients

Wholewheat Flour – 1 1/2 cups

Brown sugar – 3/4 cup

Oil – 1/3 cup

Milk – 1/2 cup +4 tbsp

Black Grapes – 1 cup (dusted with whole wheat flour)

Vinegar – 2 tbsp

Vannila extract – 1 tsp

Baking Soda – 1 1/2 tsp

Salt – a pinch

Procedure

Get ready with all the measured ingredients.

Sieve Wholewheat flour,baking soda and salt together and keep aside.

To it add Brown sugar and mix with a spatula until it is evenly combined.

In a wide dry bowl,add milk,Vanilla extract and vinegar and mix well.

Combine dry ingredients to the wet ingredients and gently fold with a spatula. Do not over mix the cake batter.

Take a 1/2 to 1 teaspoon of sifted whole wheat flour and sprinkle on to the washed ,dried grapes. Coat evenly so that they do not sink bottom of the cake . Fold the black grapes into the cake batter gently using spatula.

Preheat your oven to 170°C . Grease your cake mould with flavourless oil and dust with whole wheat flour twice. This helps cake sticking to the mould or pan. Transfer the cake batter immediately in the silicon mould (can use any cake pan )and level the top with the spatula .


Bake in the preheated oven at 170°C for 35 to 40 minutes or inserted skewer comes out clean. Have an eye after 30 minutes as every oven behaves different.

Let it cool completely before serving. Garnish with black grapes sprinkle with confectioners and serve with hot cup of coffee or milk. I prefer to have with a strong cup of coffee????.

Sieve dry ingredients for at least three times.

Wash grapes and pat dry on towel .

When adding dry ingredients to wet ingredients gently fold the cake batter using cut and fold method. Do not overmix.

Preheat oven to 170°C and bake immediately when transfer to cake mould.

You can use any cake mould. I used Silkomart silicon cake mould.

Sprinkle a teaspoon of dry ingredients on to the black grapes and mix thoroughly . It helps the fruit to get evenly distributed to the cake and do not sink bottom of the cake too.
