No-Bake Blueberry Biscuit Mousse Cake is a treat for all with a surprise in every spoon . It is creamy ,crunchy, biscuity , chocolatey and on a whole with flavourful Blueberry taste.
It is not an usual Mousse cake with biscuit base covered with creamy mousse . This Cake comprises of whipped cream combined with crunchy biscuit ,a layer of chocolate filled with a layer of Blueberry filling in it and with a regular Biscuit base. It is a delight that’s so easy to make and doesn’t require an Oven!
In my journey of Baking I have made many cakes from Basic Cakes to Entermets which is simple to complicate flavours. Here I tried my own version of combining whipping cream with natural Blueberry compote mixed with crunchy BITS OF BISCUITS,a layer of CHOCOLATE , a thick spread of BLUEBERRY FILLING and a BISCUIT base.

Preparation Time : 25 mins
Chilling Time : 6 to 8 hrs
Servings : 8
Ingredients
Nutri choice Digestive Biscuit – 200 gms
Melted Butter – 3 tbsp
Blueberry fruit filling (Tinned) – 1 cup
Cookie cream chocolate bar ( Hershey) – 5
Non Dairy Whipping cream – 1 cup
Corn syrup – ¼ cup
Vanilla extract – 1 tsp
Glazed Cherries – 5 to 8
Mint leaves – 1 sprig
Procedure
Take 100 gms of Nutri choice Digestive biscuits and make into pieces. Grind the biscuits into powder in a mixer grinder.
Transfer biscuit powder into a bowl and add melted butter and mix well. Line a parchment paper in a cake tin and fill the base evenly as shown. Level the base biscuit mixture with the help of a offset Spatula or a katori.
Arrange cookie cream milk chocolate bar above the biscuit base as shown.
Fill in Blueberry fruit Filling in the centre of the empty space. Fill the space evenly as shown.
In a non grease bowl,add non dairy whipping cream and whip to soft peaks. To it add corn syrup and whip until it combines well with the whipped cream. Corn starch helps to stabilize cream well.
Add in vanilla extract and mix gently. Add biscuits pieces (100 gms) as shown and mix well. Finally add Blueberry fruit Filling and gently mix until all the ingredients are mixed well.
The Blueberry Biscuit cake mix is ready. Fill the mixture to the brim of the cake tin and level the surface.
Cover the biscuit cake with a cling film and freeze it overnight for 8 to 9 hours.
Remove the cling wrap and garnish with glazed cherries,mint leaves and blueberry fruit Filling. No bake Blueberry Biscuit Mousse Cake is ready to devour.

Where can u get the blueberry filling tin.other than hersheys chocolte what can be substituted.and one more doubt.it shud b kept in the freezer

It is easily available in Nilgris store and Reliance super market or can try online too…. any bar chocolate can be used and yes,freeze for 4 to 5 hrs or over night to get perfect slice.Happy Cooking????
