Ingredients Notes
The ingredients required for the recipe are simple and commonly found in every pantry. However, if any ingredient such as chocolate chips is not available, do not worry- check the substitution section for perfect alternatives.
- all-purpose flour– If you want your muffins to resemble those from a bakery, it’s best to use all-purpose flour.
- banana– For the best flavour and texture, use ripe bananas. Overripe bananas with brown skin and soft flesh add sweetness and moisture to the muffins.
- semi sweet chocolate chip– I use semi-sweet chocolate chips in banana chocolate chip muffins to subdue the sweetness.
- egg– I use a medium-sized egg.
- sugar– The natural sweetness of ripe bananas is usually enough, but feel free to add sugar to taste for sweeter muffins.
- oil– I use vegetable oil. It helps to keep the muffins moist and light.
- baking powder and baking soda– Make sure to use both the leavening agents are fresh, else the muffins will not rise.
- salt
- vanilla extract

Place unpeeled bananas on a baking tray. Bake at 300*F for 20 to 25 minutes or until bananas turn soft. Allow the bananas to cool before peeling and scooping out the fruit.
Baking muffins at high temperature and long time can cause hard crust. To avoid, follow the recipe instruction for the correct temperature and time to bake the muffins.
Using too much sugar in your muffin batter can cause the tops to become sticky. When there is an abundance of sugar, it can attract moisture during baking and result in a wet texture on the top of the muffins.
