It is a simple one-bowl muffin recipe, which you can whip within few minutes. Firstly, in a wide bowl, add egg and caster sugar. Whisk them in an electric beater for two minutes until it is well combined. Add oil to the egg-sugar mixture. Now sift all-purpose flour, baking powder, baking soda, salt, and cinnamon powder into the wet mixture. With a spatula, gently fold in the flour with a cut and fold method. Now add sweet apple flavour and a cored chunk of apples. Mix it gently. Do not over mix the muffin batter. Meanwhile, preheat the oven to 180 C (I used a microwave convection oven). Transfer the muffin batter to the muffin cups and bake it for about 15 to 18 minutes or until the inserted skewer comes out clean.

In a dry bowl, add eggs and caster sugar and whisk well until it is well combined.
Now add oil ( I used sunflower oil) to the egg mixture.
Sift in all the dry ingredients to the wet mixture.
Add in few drops of sweet apple flavour to the muffin batter. The combination of cinnamon and apple flavour is divine.
Finally, add in peeled cored chopped apples and gently fold into the muffin batter. Core the apple at the last minute ( I follow the same ) as it turns brown if you do it ahead of time.
Meanwhile, preheat the oven to 180 C. Fill in the muffin batter as shown in the picture. I didn’t use a muffin tray as my muffin cup is firm to hold the batter. Bake it for 15 to 18 minutes or, inserted skewer comes out clean.
Let it completely cool on a cooling rack before you start it to dig in.
