Here comes my 100th blog post of Plate to Palate with my dear Mama’s (Amma’s) old-fashioned butter cake/ Easy Simple Cake recipe. This recipe is quite simple as any other old-fashioned cake and it’s a forty-five year old recipe. Honestly, I have no idea where my mom got this recipe from, especially back in those days when there was no internet. I made a mistake of not asking the details about where she got this recipe from, and I now regret this, as my mother passed away recently (2nd March 2021).
About My Mama (Amma)
My culinary journey started at an early age with my mom’s guidance. She was my Guru and equally was my critique and, she made sure that I learned from my mistakes. She was a great friend and an expert culinary teacher who cooked and served food with love. Furthermore, she used to cook an array of platters for family and friends within a short period and on short notice. Likewise, she was an expert in cooking all varieties of food, be it vegetarian or non-vegetarian dishes, condiments like pickles, podis, etc. Last but not least, cakes and puddings. This cake recipe that I’m sharing with you all today was her final baking recipe that she left for us.
My Mama’s Conditions During Cake Prep
She longed to bake her favourite cake for us, but with certain advanced restrictions. Let me list out some
- She didn’t use any cup or weighing scale. She used her favourite tumbler for measuring flour, sugar, and butter.
- Likewise, she didn’t use an electric hand beater or wire whisk. She sanitized her hands and mixed the cake batter with her gentle hands.
- She always powdered sugar in an electric mixer grinder.
- In the same jar, she beat eggs until frothy.
- She transferred the cake batter to the cake tin all by herself.
- Finally, after ensuring that the cake was baked, she demoulded it all by herself.

As she didn’t use a wire whisk or electric hand beater, she relied on her hands and, so sanitized well.
My Mama didn’t allow anyone to break the eggs. She wants to do it all by herself.
She’s using her manual hand gadget for mixing the cake batter.
At the age of 80, she very patiently mixed the cake batter all by herself. The way she cut and fold the batter and check the consistency of the cake batter made me astonishing.
I love the way she transferred cake batter without anybody’s help. The confidence level in her made me astonished many times. She solely believes in herself and wants to complete all by herself.
She was longing to bake and was keeping on telling me about her wish. It all happened during the lockdown. Yes, I was with her for nine months ( Thanks to lockdown). I planned one day on 19th August 2020 and took the initiative to fulfill her dream. She baked the cake and served it to all at home. She was happy with the outcome of the cake but didn’t realize the future. The day 19th August 2020 (the day of baking) will be memorable forever in my life.
How to prepare Mama’s (Amma’s) Old fashioned Butter Cake/Easy Simple Cake
Though my Amma measured in her style, I weighed all the ingredients on a weighing scale.
Lets see how to prepare the cake in step by step preparation.
Firstly, sieve all-purpose flour and baking powder and keep it aside.
In a dry mixer grinder, grind granulated sugar to a fine powder. Finely powdered sugar helps to cream well easily with butter.
In the same mixer grinder, beat egg until frothy.
In a dry wide bowl, add room temperature butter and powdered sugar and cream well until it is well combined.
After creaming well, add sifted all-purpose flour and baking powder and gently mix it with your gentle hands.
Now add beaten eggs to the flour mixture and mix gently.
Add few drops of vanilla extract to the cake batter. Meanwhile preheat oven to 18o*C .
Grease 7″ inch round baking pan and dust with all-purpose flour well. Transfer the cake batter into the baking pan and tap gently on to kitchen counter to remove any large air pockets that may cause uneven texture. As the cake batter was more, I requested her to change to a 9″ inch pan. She refused and, all she wanted to bake in her old pan and allowed to use paper cups and silicone mould. Bake in a preheated oven for about 20 to 25 minutes or inserted skewer comes out clean.
After baking, let it cool completely. Demould gently and slice according to desired shape and size.
Slicing and Tasting time
She sliced the cupcakes into four pieces. Happily distributed to everyone, and took a small bite for herself, and was happy the cake came out perfectly.
How To Serve Mama’s (Amma’s) Old Fashioned Butter Cake
Mama’s (Amma’s) Old Fashioned Butter Cake is ready to devour. It is best to serve as a dessert with a scoop of ice cream. Also, with a cup of coffee or milk or for morning breakfast, and can pack for a kid’s snack box.
How To Store Old Fashioned Butter cake
Store the cake in an air-tight container and, it stays good on the kitchen counter for three days. If you want your cake to last for a week, wrap well with a cling film and refrigerate.

Notes
All the ingredients should be at room temperature.
Measure granulated sugar and then powder in a mixer grinder.
For this measurement use a 9 inch round pan.
Do not open the oven door during the first 20 minutes ,the temperature falls suddenly and cake will not rise properly and may collapse in the centre.
Every oven behaves differently so adjust the temperature accordingly.

Equipment

- 240 gm all-purpose flour
- 150 gm sugar (you can increase 10 to 15 gm according to your taste)
- 150 butter (unsalted butter)
- 5 egg
- 1½ teaspoon baking powder
