Eggless Butterless Banana Bread is an easy ,simple and one bowl recipe to make without any fancy gadgets. This recipe is a no- fail recipe that comes out perfect every time!
This recipe needs only handful of basic baking ingredients available in pantry plus ripe bananas. Ripe Bananas gives extra moist and slight tender crumbs,which is delicious. Make sure banana should be over ripe with black spots and not yellow firm ones. Yellow ones are perfect for pudding and smoothies ,but not for Banana bread.
I always make some variations when baking Banana bread. In this recipe,I added some walnut and cashews to give some nutty crunchy taste. Sometimes I make plain banana bread with the basic banana recipe and also add some dried fruits or some choco chips. Do feel free to experiment in adding nuts or dried fruits.
You can see a smooth finish top in the Plain Banana bread. Yes,add -ins gives slight crack top but the taste remains same. Always ,I have to bake two batches when baking banana bread. This is a one bowl recipe and it does not require any fancy gadgets to make this recipe . It all needs a wide glass bowl,fork and a wire whisk. The ingredients needed for this recipe are over ripe bananas ,all purpose flour,brown sugar,oil,baking soda,salt, few walnuts ,cashew nuts and vanilla extract. To begin with the process , mash bananas with a fork or spoon and keep aside .I mash banana using a fork and I mash well without any chunks. Some like to have banana chunks in the bread and it is purely individuals choice.
Firstly, add brown sugar in a clean dry glass bowl and add oil and mix with a wire whisk. Then add mash banana and mix thoroughly with vanilla extract. Now add baking soda and salt to all purpose flour mix well. Add flour mixture little at a time to the banana mixture and gently mix with a wire whisk until it is well combined.The cake batter will be slightly thick in consistency. Do not worry! Add in ¼ cup of milk and mix gently to achieve easy flowing batter consistency.Finally,add chopped flour coated nuts to the cake batter and gently mix until it is evenly distributed. Hooray ! batter is ready to bake in a preheated oven at 180 c for 50 to 55 minutes or inserted skewer comes out clean. Cool the cake completely before slicing to get perfect slice.
How to store or Freeze Eggless Butterless Banana Bread?
Banana bread stays fresh for three days on kitchen counter. If ,you bake big batches make sure to cool the banana bread completely. Then tightly wrap the Banana loaves with a cling film or an aluminum foil. Placed the wrapped loaves in a ziplock bags and store in freezer. It stays good for 2 to 3 months. Thaw the banana bread in fridge or at room temperature and slice and consume.
Can Banana bread made for Vegans?
Yes,it is so simple as this recipe is butterless ,the only change to make for vegans is to substitute milk. Replace milk with same quantity of lukewarm water . Now it is purely a perfect Banana bread fits for Vegans.

You can add any nuts,but the best nuts pairs well are walnuts and pecans. You can add any dried fruits of your choice with a combination of choco chips. It is also a best add- in to the recipe. Use only over ripe Bananas ,which is high in sugar content and for it’s beautiful Banana flavour.
You can skip Vanilla extract ,if you are satisfied with only banana flavour.
If you do not have brown sugar,swap with granulated sugar with the same quantity.
