Eggless Dried Fruit Bread recipe is one more basic bread recipe with variety of dried fruits in it. This bread is soft ,pillowy and slight crumb in texture and all would love it and I BET none would say No.

Eggless Dried Fruit Bread Recipe

This recipe is a simple and easy recipe mixed with candied fruits like pineapple, strawberry, cherry, cranberry etc. But ,if you like nuts ,you can add equal or half the quantity to it . So far in my bread recipes , I have not mixed any fruits or herbs to the dough. This is the first bread recipe,with add-ons like candied fruits and it is one of the kids favourite bread recipe in my family.

Whenever ,I make these beauties I go down the memory lane and live my childhood days. Honestly, now too I love to eat the candied fruits in my slice first and eat the bread after????. I believe many would be like me .lol…

What are the ingredients needed to make Eggless Dried Fruit Bread Recipe ?

Simple and easily available ingredients in pantry like all purpose flour,oil,sugar,Yeast,salt and water is all needed to make this Bread. You can customise candied fruit to your liking with a hint of cinnamon or any spice. I did not add any spice and want it to be plain Dried Fruit Bread.

How to make Eggless Dried Fruit Bread Recipe?

Firstly, add instant yeast,sugar to lukewarm water and let it sit it for a minute or two . Meanwhile chop all the candied fruits into small pieces. In a wide dry bowl, add sifted all purpose flour .To it add yeast mixture,oil, and salt and mix well with a spatula until it is well combined . Now sprinkle flour on a clean kitchen counter and transfer the bread dough and knead well for 12 to 15 minutes till dough turns smooth and soft .Roll the dough into a rectangle shape and add chopped candied fruits and gently mix the bread dough. Transfer the bread dough in a well greased bowl and cover with cling film or clean towel. Let it sit for first proving for about 1 hour or until it has doubled in size.

After first proving, punch the dough to deflate the air in the dough. Divide the dough into two equal halves. Place in a greased loaf tin and cover with a cling wrap for second proving .Let it sit for 30 minutes or until it has doubled in size. Preheat oven to 180 C and bake for 30 minutes or until it is slightly golden brown. Dried fruit bread/eggless is ready to devour.

This dried fruit bread is delicious as it is or can be toasted and serve with the following jam recipes.

Lets jump to the recipe with step by step preparation. Do try and let me know the feedback in comments.

Procedure

Gather all the ingredients with perfect measurements.

In a dry wide bowl add 3 cups of all purpose flour and add yeast mixture (1 tsp yeast, sugar mixed with 1/4 cup lukewarm water)

And add oil and water and mix well until it is well combined.

Sprinkle flour on a clean kitchen counter and knead for 10 to 15 minutes until bread dough turns smooth .Flatten the dough by stretching with clean palm as shown and add chopped dried fruits.

Now gently cover the dried fruits with a dough and gently mix until all the the dried fruits are evenly mixed in the dough. Place the dough in a greased bowl and cover with a cling film for 2 hrs or it double in its size.

The dough is beautifully risen. Knock down and deflate the air in the bread dough.

Divide the dough into two equal halves .Place in a greased loaf pan for second proving . Cover with cling film and let it sit for 30 minutes or until it double in size.

After second proving ,remove the cling film and brush the bread dough with milk.

Preheat oven to 180 C and bake for 30 minutes or until it is brown on top. Remove loaf tin and brush surface of the bread with melted butter (purely optional).Allow to cool the tin only for 10 minutes and remove bread to avoid soggy at the base. Cover the bread loaf to achieve soft crust.

Let it sit over night for best result. Always avoid slicing when bread is warm. Slice next day with a serrated knife and serve as it is or with jam or butter.

Notes

Firstly ,first proving of bread is important to allow the yeast and gluten to develop and it helps in enhancing the flavour of the Bread.

And the second proving is also important to get a high risen airy and light Bread Loaf.

Do not over- prove the Bread dough as it result in an unpleasant yeast flavour.

Do not over – prove at second stage as it end up with a Bread loaf, where the crust separates from the Loaf.

Always buy good branded fresh yeast.

Home made Bread will stay fresh for two to three days only.

For this recipe,you can use any candied fruits or even nuts as per your choice.

You can freeze the bread for longer shelf life.

Thaw the bread before consuming.

  • loaf tin 8 1/2″ * 4 1/2

Ingredients
 
 

  • 3 cup all-purpose flour ( 1/2 cup for working dough )
  • 1½ cup mixed Candied Fruits ( chopped ) ( pineapple, strawberries, cherries, cranberry)
  • 1½ cup lukewarm water

  • 1 tsp butter little (for brushing baked bread)
