Cranberry Loaf Cake

Cranberry Loaf Cake is an easy cake to make and perfect for all season especially Holidays. This Cranberry Loaf cake has the perfect combination of tartness ,sweetness and chewiness which comes from dried Cranberries. It is an easy recipe to follow with the regular cake ingredients with dried cranberries and a simple sugar glaze takes the cake to the next level.This loaf cake is perfect for evening cup of coffee, kids snack box and dessert for parties .

Cranberry Loaf Cake

This cake is so easy to make ,delicious and the texture is soft and moist with each slice of the cake equally distributed with cranberries . Every bite imparts the sweet and tart taste of cranberries ,which is heavenly. I always prefer a plain cake without any frosting , but trust me, this simple sugar glaze made for my hubby has become my favourite too. So,I made extra sugar glaze for the plain cake loaf ,you see in the picture????.

Ingredients in the Cranberry loaf cake.

Other than Cranberry (Craisins), basic cake ingredients are all purpose flour,egg, butter, sugar,rising agent and vanilla extract with ½ cup of milk are in the recipe. Milk gives the richness, delicate crumb and soften the dry ingredients well in the cake batter. A cake make with Full fat milk will also brown better than one made with water or skimmed milk ,so use full fat milk and follow the recipe to T.

How to make Cranberry Loaf Cake?

Let all the ingredients be at room temperature. Cream butter well and add powdered sugar and cream well for few minutes. Add egg one at a time to form fluffy cream consistency. Now sift flour, salt and baking powder to the creamed mixture and gently fold with a spatula. Now add milk and beat for 3 minutes.Finally add vanilla extract and cranberries to the cake batter and gently fold the cake batter only twice or thrice. Do not over mix the batter and deflate the air in the batter. Grease a loaf pan and dust with flour twice and place parchment paper over hanging as shown. Bake for 20 to 25 minutes or until the skewer inserted comes out clean. Now lets jump to the step by step preparation of Cranberry Loaf Cake .

Procedure

Get ready with all the ingredients at room temperature.

In a bowl add room temperature butter and cream well with electric hand mixer.

Add powdered sugar and cream until fluffy for about 2 to 3 minutes.

Now add egg one at a time to the creamed mixture and beat well.

Sift all purpose flour,baking powder and salt to the creamed mixture.

Fold in flour with a spatula and add milk to the mixture.

Now with an electric beater beat the creamed mixture for 3 minutes on low speed.

Add vanilla extract and dried cranberries(craisins) and gently fold with a spatula.

Preheat oven to 180 °C. Grease loaf pan with butter and dust with all purpose flour twice. Line parchment paper over hanging outside as shown.Pour the cake batter to ¾ of the tin as shown.

Bake for 20 to 25 minutes or until a skewer inserted in the centre comes out clean.

Cool the cake in pan. When it is cooled remove the parchment papper.

Mix icing sugar with milk and glaze the Cranberry loaf Cake as per your choice. Garnish with Cherry and mint leaves and let it rest until the sugar glaze set for few minutes. Now Cranberry Loaf Cake is ready to serve.

Cranberry Loaf Cake

Ingredients
 
 

  • 2½ cup All purpose flour 
  • 1 cup Cranberries ( Craisins)
  • 1 cup Granulated sugar  powdered in an electric mixer grinder
  • 0.7 cup Butter  room temperature
  • 3 Eggs
  • ½ cup Milk
  • 1½ teaspoon Baking powder
  • ½ teaspoon Salt
  • 2½ teaspoon Vanilla extract

    Hi, is the quantity of ingredients mentioned above sufficient for 1 loaf cake or 2.. since the pictures show 2 loaf cakes
