Chocolate cream sandwich cookies

Chocolate cream sandwich cookies are also known as sandwich biscuits with any type of filling. This cookie is a simple cookie as such, as you can pair with any flavours of cookie and fillings. Here, I paired my all time favourite vanilla flavour for the cookies and chocolate cream for the filling. The texture of the cookies is crisp outside and slightly soft inside.

What is a Sandwich Cookie?

A simple cookie is taken to the next level by turning them into a sandwich! A sandwich cookie consists of two cookies with a filling in between. Choice of filling is endless! Be creative and mix match flavours as per your palate taste.

Types of Filling

Fillings like chocolate buttercream, ganache, buttercream, cream cheese, jam, ice cream, peanut butter, toffee sauce with praline, the list is endless. Filling like ice cream, sauce with the praline need to be refrigerate to get set. Other filling set at room temperature and can consume immediately.

How to make Chocolate cream Sandwich Cookies?

Sieve all purpose flour and baking powder together and keep it aside. In a wide bowl, cream butter and powdered sugar until fluffy. Now, fold in flour mixture and gently mix. To it add milk to get the perfect dough consistency. Meanwhile, preheat oven at 180 C. On a baking sheet, flatten the dough and using a cookie cutter cut to desired shape. Bake it for 15 minutes or until edges turn brown. Place it on a cooling rack until it is completely cool.

How to make Chocolate cream?

Sieve 2 teaspoon cocoa powder and icing sugar together. Add 25 gm butter and cream well until smooth. Chocolate buttercream is ready to pipe. Make sure cookies are completely cool before sandwiching.

Let’s see the step-by-step preparation of Chocolate cream sandwich cookies.

Cooking Time : 15 minutes

Servings : 10

Ingredients

All purpose flour – 2 cups

Sugar – 3/4 cup

Butter – 150 gm

Baking powder – 2 tsp

Milk 4 tbsp

Vanilla essence – 2 tsp

Ingredients for the Chocolate cream

Unsweetened Cocoa powder – 2 tsp

Icing/confectioners sugar – 1 cup

Unsalted butter – 25 gm

Procedure

Gather all the ingredients for making cookies at room temperature.

In a wide bowl add room temperature butter and powdered granulated sugar and beat well until it is fluffy.

To it add vanilla extract and beat gently on low speed.

Add sifted all-purpose and baking powder mixture little at a time and gently fold with a spatula.

After adding all the flour mixture add milk and mix until it forms pliable dough.

On a baking sheet, roll the dough with a rolling pin and use any cutter as you wish and place it on a parchment lined baking tray.

Bake it at 180 C for 15 min or until edges turn brown.

Remove it from baking tray and cool it on a wire rack.

To make chocolate butter cream ,sieve cocoa powder and icing sugar/confectioners sugar and add room temperature butter and mix well with a spatula.

In a piping bag fill chocolate buttercream and pipe in any nozzle as you wish. Sandwich with chocolate cream when cookies are completely cold.

It’s done, perfect delicious, indulgent chocolate butter sandwich cookies are ready to devour with a hot cup of warm milk, coffee, tea or as it is.

How to store chocolate cream sandwich cookies?

The cookies stay fresh on the kitchen counter for up to a week. You can store it in the freezer for more than three months. For that, you neatly stack the cookies in a zip pouch and freeze them. Thaw the cookies from the freezer or microwave them for a minute or two before consuming them.

Notes

Use room temperature butter.

I have reduced the sugar in the cookie as it will compensate with the chocolate cream filling. If you are sweet tooth, you can increase the sugar (2 to 3 tbsp) more.

I usually powder, granulated sugar and use for my bakes.

You can use any flavour for the cookie as per your choice.

Any filling goes well with this cookie.

  • 0.7 cup Butter
  • 2 tsp Baking powder 
  • 4 tbsp Milk
  • 2 tsp Vanilla essence

  • 2 tsp Unsweetened Cocoa powder
  • 1 cup Icing/confectioners sugar
  • 0.1 cup Unsalted butter

Instructions

    What is equivalent to .7 and .1 cups of butter? Thank you!

      There are two Tabs on the recipe card. One is US cup measures and Metric. You can toggle the Tab according to your convenience (FYI). To answer your query .7 cup of butter is approximately 159 to 160 gram of butter or 2/3 cup.
