Mint Biscuits/ Pudina Biscuits(Eggless) is my family’s favourite biscuit with a lovely minty flavour and slight spicy in taste. Putina biscuits! This is how I used to say when I was small. Those days bakeries were not many like now,and this biscuits were made only in one bakery at my place. The taste and flavour of this biscuit is unique and my love for this Bakery style Mint Biscuit is boundless.
When I started baking long time ago, these biscuits were on my wish to do list. Three years ago , I tried for the first time at my Parents place and got a good feedback from all. I was very happy that I achieved the same taste as that of our Favourite Bakery shop.
The recipe of this biscuit is very simple and it needs All purpose flour,butter,baking powder, the main ingredient Mint ( Pudina), ginger,green chilles, curd and salt. added one by one and finally curd is added for binding and the dough is flattened and cut into an inch sized biscuits and baked at 180°C for 10 to 15 minutes . Let’s jump to the recipe with step by step preparation.
PREPARATION TIME : 10 Mins
BAKING TIME : 15 Mins
SERVINGS : 4
INGREDIENTS
All Purpose Flour – ¾ cup
Butter – ¼ cup
Baking Powder – ¼ Tsp
Mint leaves – 2 fistful
Green Chilles – 11/2
Ginger – ½ “
Curd (yougurt) – 1 to 11/2 Tsp
Salt to taste
PROCEDURE
First wash Mint leaves, ginger and green chillies and pat dry well on a tissue paper.
Chop mint leaves,ginger and chillies finely in a chopper as shown.
Sift all purpose flour,baking powder and salt together and mix well until it incorporates well.
Now add butter to the flour mixture.
Gently rub flour and butter to a breadcrumb consistency.
Now add finely chopped Mint leaves,ginger and green chilli to the flour mixture and gently mix the dough.
To the mixture add curd and mix well to make a soft dough
Roll the dough gently and do not knead.
Roll the dough using a rolling pin and cut into an inch thickness or to desired shape. Place them on a tray and bake in a preheated oven at 180 °C for 15 minutes or until light brown at the base.
Let it cool for 10 to 15 minutes on a cooling rack . Yummy Bakery Style Mint/ Pudina Biscuits is ready to serve as it is or with a cup of Tea or Coffee.

Notes
Chop Mint leaves, Ginger and Green chillies finely into even size.
Gently handle the Biscuit dough. Do not knead after adding curd.
Can use cookie cutter to shape the dough.
Adjust Chilli and Salt to taste.
Every oven behaves differently. So have an eye during first 10 minutes.
