Eggless Tutti Frutti Cookies/Biscuits

Eggless Tutti Frutti cookies is one of the favourite cookies of kids in those days. When I was small this is the only fancy cookie bejeweled with coloured candid fruits and hot favourite among kids . Now a days it is very rare to see this cookies in Bakery shops .Therefore , I planned to make these Eggless Tutti Frutti cookies and saved some Tutti frutti bought during Christmas .I bought a big batch of these GEMS to add for Cakes and christmas Breads and used the rest . I did not get red coloured Tutti fruitti ,which I love the most, so made with what I had.

This is a simple recipe prepared with minimal ingredients available in pantry and also no fancy gadgets need to prepare. All need is All purpose flour,butter, Tutti frutti ,sugar,milk,fruit essence and Baking powder. Firstly, cream butter and powdered sugar until it is pale and fluffy. To it add flour and Tutti Frutti and gently mix until it forms soft dough consistency.Since it is soft to work on the dough ,wrap the dough and refrigerate for 30 minutes. Then cut to desired shape and bake at 180 °C for 17 to 19 minutes .Simple,soft and yummy cookies is ready. It goes well with a cup of coffee for evening snack and kids snack box. Lets see how to prepare this easy simple cookies with step by step preparation.

Preparation Time : 10 mins
Chilling Time : 40 to 50 mins
Baking Time : 17 to 19 minutes
Servings : 8
Ingredients

All purpose flour – 200 gm

Butter – 100 gm

Powdered Sugar – 1/2 cup

Pineapple Essence – 1/2 tsp

Tutti Frutti – 1/2 cup

Milk – 2 to 3 tbsp

Baking Powder – 1/3 tsp

Salt – a pinch

Procedure

Get ready with all the ingredients at room temperature.

In a dry bowl add powdered sugar and room temperature butter and cream well. I cream with Electric hand mixer, you can cream with wire whisk.

To the creamed mixture sift flour,salt and baking powder and mix well .

Add fruit essence and mix well.Then add milk little by little and fold gently with a spatula.

Add Tutti Frutti and mix gently mix until everything comes together.

Roll the dough into a log and wrap in a cling film and refrigerate for 40 to 50 minutes.

After 40 to 50 mins take out the dough log from refrigerator and slice according to desired even shape.

Preheat oven to 180 °C for 10 minutes. Place the slices on a baking tray and bake for nearly 15 to 17 minutes or until the base turn brown in colour.

Remove from the oven and cool them on a wire rack until it is completely cool. Store them in an air tight container and serve as a snack for kids snack box or have with a cup of milk or coffee.

NOTES

Adjust sugar according to individuals taste.

I bake in microwave convection oven for 19 minutes for the first batch and 17 minutes for second batch. Every oven behaves different so, keep an eye after 14 minutes.
