Eggless Butter Cookies is a very simple cookie that any novice baker can bake by following correct measurements. Four basic ingredients is needed to relish this golden drops of melt in mouth Butter Cookies.

1 ½ cup all-purpose flour ⅔ cup unsalted butter ½ cup Icing sugar 1 teaspoon vanilla essence Additional 2 tablespoon sugar

In a dry bowl, beat salted butter and icing sugar together until fluffy.
Add few drops of Vanilla extract and whip ( I use Electric Hand Mixer) until it is well combined.
Add sifted all purpose flour into three parts and whip until it is creamy soft butter cream consistency.
Transfer the batter into a piping bag with a stainless steel open star nozzle attached and pipe on a silicon mat.
Bake in a preheated microwave convection oven of 160 °C for 15 to 16 minutes until golden browned edges.
First batch of cookies needs 15 to 16 mins. Next batches need only 13 to 14 minutes. Have an eye after 10 minutes or until cookie edges turn brown.
