Mint Biscuits/ Pudina Biscuits

Ingredients
 
 

  • ¾ cup All Purpose Flour
  • ¼ cup Butter 
  • ¼ teaspoon Baking Powder
  • 2 Mint leaves handful
  • 1 ½ Green Chilles
  • ½(inch) Ginger
  • 1 to 1 ½ teaspoon Curd (yougurt) 
  • Salt to taste

Instructions
 

  • First wash Mint leaves, ginger and green chillies and pat dry well on a tissue paper.
  • Chop mint leaves,ginger and chillies finely in a chopper as shown.
  • Sift all purpose flour,baking powder and salt together and mix well until it incorporates well.
  • Now add butter to the flour mixture.
  • Gently rub flour and butter to a breadcrumb consistency.
  • Now add finely chopped Mint leaves,ginger and green chilli to the flour mixture and gently mix the dough.
  • To the mixture add curd and mix well to make a soft dough
  • Roll the dough gently and do not knead.
  • Roll the dough using a rolling pin and cut into an inch thickness or to desired shape. Place them on a tray and bake in a preheated oven at 180 °C for 15 minutes or until light brown at the base.
  • Let it cool for 10 to 15 minutes on a cooling rack . Yummy Bakery Style Mint/ Pudina Biscuits is ready to serve as it is or with a cup of Tea or Coffee.

Notes

Chop Mint leaves, Ginger and Green chillies finely into even size. Gently handle the Biscuit dough. Do not knead after adding curd. Can use cookie cutter to shape the dough. Adjust Chilli and Salt to taste. Every oven behaves differently. So have an eye during first 10 minutes.
