Whipping up a batch of blueberry chocolate chip muffins is a breeze and makes for a delicious treat that kids can enjoy during their holiday break or as a breakfast or brunch option. This recipe is definitely worth trying and is sure to be a hit with everyone who tastes it.

Ingredients
 
 

  • cups all-purpose flour
  • 1 cup caster sugar
  • cup oil ( neutral oil )
  • 1 cup milk ( add according to the consistency of the muffin batter )
  • 2 teaspoon baking powder
  • ½ teaspoon baking soda
  • teaspoon salt
  • vanilla extract
  • 1 cup fresh blueberries
  • ¾ cup semi- sweet chocolate chip

Instructions

  • Mix the sugar and oil thoroughly. I use a wire whisk. An electric hand beater was not used, but you can choose to use one if it is more comfortable for you.

  • Sift all the dry ingredients.

  • Use a spatula to mix the dry ingredients. Gradually pour in the milk and thoroughly whisk until well combined.

  • Add vanilla extract to the muffin batter.

  • To finish, incorporate blueberries and chocolate chips into the muffin mixture.

  • Combine the blueberries and chocolate chips with the muffin batter. At the same time, make sure to preheat the oven to 180 degrees Celsius.

  • To make blueberry chocolate muffins, fill cup liners or silicon moulds with the batter and add a generous amount of chocolate chips and blueberries on top.

Notes

1. When baking blueberry chocolate chip muffins, include fresh blueberries for the best flavour and texture. 
2. Gently fold in the blueberries and chocolate chips to avoid overmixing the batter. It will help ensure a tender and moist muffin with pockets of melted chocolate evenly.
