Carrot poriyal/ easy fried carrots is a popular South Indian dish made by sautéing grated carrots with regular pantry ingredients. This recipe is quick and effortless to prepare.

Ingredients
  

  • 300 gm carrot
  • 1 onion ( medium size )
  • 4 tablespoon coconut ( grated )
  • 1 sprig curry leaves
  • 2 tablespoon oil
  • 1 teaspoon mustard seed
  • 1 teaspoon urad dal
  • 1 teaspoon gram dal
  • ½ teaspoon cumin
  • salt ( to taste )

Instructions
 

  • First, heat oil in a pan over medium heat. Then, add mustard seeds, urad dal, gram dal, and cumin to the pan. Wait until they start crackling.

  • Next, include diced onions and sauté them for a few minutes until they become translucent.

  • Add the green chilies and stir-fry for one minute.

  • Next, add the washed and finely grated carrots to the pan and cook on medium heat.

  • Mix the carrot thoroughly with the other ingredients for even distribution.

  • Place a lid over the carrot and cook it for a minute or two until it becomes soft.

  • Finally, add grated coconut. It is purely optional.

  • To finish, add curry leaves as a garnish and turn off the heat.
