Carrot poriyal/ easy fried carrots is a popular South Indian dish made by sautéing grated carrots with regular pantry ingredients. This recipe is quick and effortless to prepare.

This dish is both simple and flavorful and is commonly served as a side dish alongside rice and dal or as a filling for dosas and wraps. Carrot poriyal is not only visually appealing but also provides a nutritious serving of vitamins, minerals, and fibre.

What is poriyal/ stir-fried carrots?

Poriyal is a type of dish that involves stir-frying finely grated or chopped vegetables with basic spices and herbs, then adding coconut as a finishing touch. This preparation is typically served dry.

I often prepare Carrot Poriyal and other poriyal dishes at home because they are quick and easy to make. This particular dish is a favourite and doesn’t require much time or effort.

Ingredients for carrot poriyal/ stir-fried carrots

  • carrots
  • onion
  • chillies
  • coconut
  • mustard seeds
  • urad dal
  • gram dal
  • cumin
  • curry leaves
  • oil

Step-by-step preparation of carrot poriyal

First, heat oil in a pan over medium heat. Then, add mustard seeds, urad dal, gram dal, and cumin to the pan. Wait until they start crackling.

Next, include diced onions and sauté them for a few minutes until they become translucent.

Add the green chilies and stir-fry for one minute.

Next, add the washed and finely grated carrots to the pan and cook on medium heat.

Mix the carrot thoroughly with the other ingredients for even distribution.

Place a lid over the carrot and cook it for a minute or two until it becomes soft.

Add salt according to your preferred taste.

Finally, add grated coconut. It is purely optional.

To finish, add curry leaves as a garnish and turn off the heat.

Carrot poriyal or stir-fried carrots make a great side dish for rice or a delicious filling for wraps. They can also be enjoyed on their own.

What to serve with carrot poriyal/ fried carrots?

You can serve carrot poriyal, also known as stir-fried carrots, with rotis, rice, or as a filling in wraps. This dish complements South Indian rice dishes such as sambhar rice, rasam rice, and curd rice. It also goes well with a variety of rice dishes like South Indian style lemon rice, Tamarind Rice/ Imli Chawal and Coconut Rice/Nariyal Chawal.

Variations

For this recipe, I used grated coconut, but you could also choose to use fried peanuts or sesame seeds. Personally, I prefer these two options to avoid coconut.

Fresh peas, cabbage, and French beans complement carrots nicely. You can mix any of the vegetables I mentioned above.

If you don’t have a grater for carrots, don’t worry. Just chop them into small pieces and add a quarter cup of water to aid in the cooking process.

I enjoy spicy food, so I added green chilies to my dish. However, if you do not prefer spicy food, feel free to skip the chilies. Additionally, if green chilies are not available, you can use dried chilies instead.

In making this recipe, I opted for sunflower oil, but feel free to use any oil that suits your preference. I find coconut oil to be a great alternative as well.
