Coconut Rice/Nariyal Chawal/South Indian Style

Coconut rice /Nariyal Chawal / South Indian recipe is one of my favourite variety rice recipe since childhood . I remember,I start to prepare all by myself when I was in middle school. I’m a great lover of variety rices and often prepare weekly once or twice a week. Making is so simple and easy with no grinding or combination of spices. Precooked rice, fresh coconut,dry chillies and dals for tempering is all needed to prepare this sumptuous dish. To make it rich and flavourful ,I added cashew and Ghee which is optional. Offering of coconut rice in Temple to devotees is common is South India.

Eating regular full meals is bore to all and ,we do need different taste to test our Palates. If testing with easy sumptuous dish ,it is more easy to try these variety rice recipes which is a good option for lunch box for kids and adults. Any crunchy or fried vegetable is a good combo for all variety rices.Potato fry or Chips is the best side for Coconut rice and kids make no fuss to eat this rice. To make it healthier add any nuts and by adding ghee it enhances the taste and flavour of the rice.

To make this dish ,you can use precooked rice or leftover rice, so it consumes less time to prepare this dish. Cook rice grainy and not mushy.Fresh coconut which really makes all the differences in this recipe than Frozen coconut .

Coconut rice is less spicy and goes well with spicy Chicken or Mutton curries or gravies or can have as it is . My Hubby prefers to have with Bagara Baingan and mixed vegetable Paneer curry ????. Lets jump to the recipe with step by step preparation.

How To Prepare Coconut Rice/Nariyal Chawal/South Indian Style
Preparation Time : 5 mins
Cooking Time : 5 mins
Servings : 3
Ingredients

Cooked Rice – 3 cup ( precooked or leftover)

Fresh grated coconut – 3/4 cup

Cashew nuts – 1 fistful

Ghee – 2 tbsp

Dry chillies – 3

Mustard seeds – 1 tsp

Urad dal – 1 tsp

Bengal gram – 2 tsp

Asafoetida – 1/4 tsp

Curry leaves – 2 sprig

Procedure

In a kadhai heat ghee on a medium heat.

Add urad dal,bengal gram ,mustard seeds,dry chillies and cashew nuts and fry on low medium heat.

Fry until, it turns golden brown.Now add asafoetida and fry for few seconds.

Add grated coconut and fry for a minute and finally add curry leaves and salt to taste and switch off heat. Coconut rice mix is ready to mix in precooked rice or leftover rice.

In a dry bowl add rice and coconut mixture and gently mix with rice.

Serve Coconut rice /Nariyal Chawal/ South Indian Style with any crispy sides ,gravies ,curries or as it is. It’s a comfort whole meal for all ages and kids love to eat with no fuss. Ingredients
  

  • 3 cups Cooked Rice Precooked or leftover rice
  • ¾ cup Fresh grated coconut
  • 1 Cashew nuts handful
  • 2 tbsp Ghee 
  • 3 Dry chillies
  • 1 tsp Mustard seeds 
  • 1 tsp Urad dal
  • 2 tsp Bengal gram 
  • ¼ tsp Asafoetida
  • 2 Curry leaves  sprig

Instructions

  •  Add salt to taste and curry leaves and mix well. Coconut rice mix is ready to mix in precooked rice or leftover rice.
  • In a dry bowl add rice and coconut mixture and gently mix with rice until it is well combined.
  • Serve Coconut rice /Nariyal Chawal/ South Indian Style with any crispy sides ,gravies ,curries or as it is. It’s a comfort whole meal for all ages and kids love to eat with no fuss.
