Simple and easy restaurant-style homemade Schezwan fried rice/ Easy schezwan veg rice recipe is an easy and delicious recipe loved by all. Once you try this fried rice, you’ll never want to get takeout from a restaurant again.

Schezwan fried rice is a quick, easy recipe to whip up in a few minutes. It is an insanely delicious and most sought recipe in a restaurant. Unlike regular fried rice, this is slightly hot and spicy with a beautiful lovely red colour.

This schezwan fried rice is a vegetarian and vegan-friendly recipe. You can make it thoroughly to your taste by swapping veggies for any meat or seafood. You can make this recipe from scratch by preparing schezwan sauce. But here, I used store-bought schezwan sauce, and I promise the taste was so good.

About Schezwan Rice?

Schezwan fried rice is a hot and spicy combination of schewan sauce, pepper powder, garlic, onion and vegetables.
A fun fact about the name ‘schezwan’; it is from a town in china called Sichuan, where the cuisine is typically very spicy and also known for very flavourful cooking. Szechuan cuisine uses different cooking methods, including sautéeing, stir-frying without steaming, dry-braising, soaking in water (Pao), or frying and then braising with corn flour sauce (Hui).

Ingredients need for this recipe

The measurements are given below in the recipe card. 

  • rice (pre-cooked)
  • red bell pepper
  • yellow bell pepper
  • green bell pepper
  • spring onions
  • coriander leaves
  • schezwan sauce
  • pepper powder
  • oil
  • salt

In today’s recipe, I didn’t add Ajinomoto. It is purely optional to add to individuals’ tastes. But authentic Chinese Schezwan fried rice calls for Ajinomoto.

How to cook Schezwan fried rice?

As always, any fried rice is an easy and delicious recipe if you follow the easy steps. Today we are going to see how to prepare Schezwan fried rice.
Usually, leftover rice is perfect for fried rice, and it saves time as well. You can also use freshly cooked rice as I did today. Just follow the simple tip to cook the rice perfectly.

Perfectly fresh cooked grainy or leftover cooked rice is essential. Firstly, in a wok, add oil on medium-high heat. Add finely chopped garlic and onions and saute for a minute or two. Secondly, add all the vegetables and stir-fry on high heat. Add schezwan sauce, pepper, and salt to taste and toss gently. Maintain high heat, which helps the vegetables cook fast.

Finally, add in freshly cooked rice or leftover rice and gently mix. Mix the rice until the sauce is well combined. Toss it well and switch off the heat. Garnish it with spring onions and coriander leaves. Simple, delicious homemade schezwan rice is ready within a few minutes. Serve it with any sauce or have it as it is.

Let’s see step-by-step preparation of schezwan veg fried rice?

Pressure cook rice. Tips on how to pressure cook is given in the step-by-step preparation. Kindly read it without fail.

After the said time, switch off the heat. When the steam settles down, transfer the cooked rice onto the plate and spread until the rice cools down completely.

Add oil to a wok or any wide pan on medium heat. Add finely chopped garlic and sliced onions and saute well.

After sauteing for a minute or two, add sliced bell peppers and cabbage on high heat. High heat cooking helps bell peppers to maintain their crunchiness.

Now add salt and store-bought schezwan sauce and gently mix the vegetables with a spatula.

Add freshly ground pepper and pre-cooked rice and mix gently or toss it if you are an experienced cook. All cooking has to be done on high heat.

Finally, garnish it with spring onions and coriander leaves. That’s it! Restaurant-style schezwan fried rice is ready to be served.

Serve piping hot schezwan veg fried rice with any Manchurians as a side. I served scrambled eggs as a side to the rice.

Variations

You can swap vegetables with egg, chicken, red meat, and seafood. Follow the same recipe as mentioned but the cooking time may vary.

IMPORTANT TIP

When you pressure the rice, make sure it is not mushy. The tip you have to follow is, do not soak rice for more than five minutes. I used short-grain rice ( seeraga samba variety ). the ratio of rice to water is 1: 2.5, and the number of whistles can be 2 to 3. Also, add half a teaspoon of oil which helps the rice non-sticky and mushy

After the said time, switch off the heat. When the steam settles down, transfer the cooked rice onto the plate and spread until the rice cools down completely.

You can use any long grain or medium size rice, which are aged

Why is my fried rice mushy?

If you pressure cook, follow the tip mentioned in the preparation process. Else if you cook rice in boiling method or Instant pot, you should not cook rice thoroughly. It should be al dente and also cool the rice after cooking. When mixing with the chicken mixture, toss it gently on high heat.

Is Ajinomoto must for the fried rice?

Authentic Chinese fried rice contains Ajinomoto. I avoid MSG in my Chinese cuisine. You can add or skip and, it is purely optional.
