The chicken fried rice recipe is again one more favorite fried rice recipe in my family, and I cook once a week without fail. Most of us love and crave restaurant-style fried rice, and it is impossible to go to a restaurant once a week. Why not make it at home? Yes, it is simple! Though it may look complicated, it is not! It is one of the simple recipes with the main minimal ingredients like chicken and some Chinese sauce. Just stock your pantry with basic Chinese sauce, and I bet you can make any fried rice within a few minutes.
All Chinese cooking is mostly are stir-fry on a wok. Stir-fry cooking on high heat helps to impart a beautiful smoky aroma to the chicken and vegetables. The smoky flavour is the soul of the fried rice with added Chinese sauces.
You can tweak this recipe as per the availability of the ingredients. Yes, I do swap chicken at times and add available vegetables. Customize it with your favourite add-ons per your palate’s preference and, enjoy this simple comfort food at your home

In today’s recipe, I didn’t add Ajinomoto. It is purely optional to add to individuals’ tastes. But authentic Chinese fried rice calls for Ajinomoto.
How to cook chicken fried rice
As always, any fried rice is an easy and delicious recipe if you follow the easy steps given. Today we are going to see how to prepare Chicken fried rice.
Usually, leftover rice is perfect for fried rice, and it saves time as well. You can also use freshly cooked rice as I did today. Just follow the simple tip to cook the rice perfectly.
Perfectly fresh cooked grainy or leftover cooked rice is essential. Firstly, in a wok, add oil on medium-high heat. Add finely chopped onions and saute for a minute. Secondly, add chicken, pepper powder, salt, and stir-fry, on high heat. Maintain high heat, which helps the chicken cook fast. Now add sliced bell peppers and saute until it turns crunchy.
Now make some space in the wok by moving chicken and vegetables to one side. Add in three eggs and scramble well. Then mix the scrambled egg to the chicken vegetable mix.
Finally, add in freshly cooked rice or leftover rice and gently mix. Finally, add in the chilly sauce, soy sauce, and vineger and toss well. Mix the rice until the sauce is well combined. Toss it well and switch off the heat. Simple, delicious homemade chicken rice is ready within a few minutes.

Chicken fried rice as itself is very aromatic and delicious to eat. It pairs well with paneer butter masala, chicken Manchurian, fish Manchurian, tomato ketchup, raita, etc.

Let’s see step by step preparation of chicken fried rice
As there was no leftover rice, here I’m using freshly cooked rice. Just follow the simple tip to get beautiful al dente rice, perfect for any fried rice.
Important Tip
When you pressure the rice, make sure it is not mushy. The tip you have to follow is, do not soak rice for more than five minutes. I used short-grain rice ( seeraga samba variety ). the ratio of rice to water is 1: 2.5, and the number of whistles can be 2 to 3. Also, add half a teaspoon of oil which helps the rice non-sticky and mushy
After the said time, switch off the heat. When the steam settles down, transfer the cooked rice onto the plate and spread until the rice cools down completely.
Slice bell pepper and onions into even size. Dice chicken into even-sized pieces and keep it aside.
In a wok, add oil ( I used vegetable oil ) on high heat.
Add sliced onions and saute until it turns translucent.
Now add chicken pieces, freshly ground pepper powder, salt, and saute well until chicken turns its colour. Saute chicken on high heat and do not reduce the flame.
Add bell peppers and toss for a minute until it is well combined. It’s time to add eggs.
Before adding eggs to the wok, push aside the chicken and vegetable mix to one side of the wok as shown.
Scramble the egg separately on the wok and mix it along with the chicken and vegetable mix.
Now add in freshly cooked rice which is aside to cool. Toss the rice thrice, so the chicken mix gets mixed into the rice.
Finally, add the chilly sauce, rice vinegar, and soya sauce to the fried rice, and mix well by tossing. Check the salt and heat. At this stage, you can add salt and pepper to adjust to your palate’s taste.
Yummy restaurant-style chicken fried rice is ready to serve. You can have any sauce or ketchup according to your taste. It is a bowl of delicious fried rice with a mix of chicken, egg, and vegetables to devour as it is.

Authentic Chinese fried rice contains Ajinomoto. I avoid MSG in my Chinese cuisine. You can add or skip and, it is purely optional.
