A simple and delicious vegetable fried rice is loaded full of fresh vegetables and a few Chinese sauces. This recipe is easy to make within few minutes with freshly cooked rice or leftover rice. It is one of our family’s favorite rice recipes, and I do make it frequently.
All Chinese cooking is mostly are stir-fry on a wok. Stir-fry cooking on high heat helps to impart the beautiful smoky aroma and crunchiness to the vegetable. The crunchy vegetables are the soul of the fried rice with added Chinese sauces.
You can tweak this recipe as per your comfort. Yes, I do swap some vegetables at times and also add egg or chicken to it. Customize it with your favorite add-ons per your palate’s preference and, enjoy this simple comfort food at your home.

In today’s recipe, I didn’t add Ajinomoto. It is purely optional to add to individuals’ tastes. But authentic Chinese fried rice calls for Ajinomoto.
How to cook vegetable fried rice?
It is an easy and delicious recipe if you follow the easy steps given. Perfectly fresh cooked grainy or leftover cooked rice is essential. Firstly, in a wok, add oil on medium-high heat. Add finely chopped onions and saute for a minute. Secondly, add all the sliced vegetables and stir-fry, tossing the vegetables on high heat. Make sure the vegetables are not overcooked. Maintain the high heat, which helps the veggies to cook fast and crunchy.
Now add freshly ground peppercorns, chilly sauce, soya sauce, rice vinegar, and stir-fry well. Finally, add freshly cooked rice or leftover rice and salt to taste. Mix the rice until the sauce is well combined. Toss it well holding, the handles of the kadhai and, switch off the heat. Simple, delicious homemade vegetable rice is ready within few minutes.

Vegetable fried rice as itself is very aromatic and delicious to eat. It pairs well with paneer butter masala, chicken Manchurian, fish Manchurian, tomato ketchup, and raita.

Let’s see step by step preparation of vegetable fried rice
In a wide kadhai or wok, add three tablespoons of oil on medium-high heat. To it, add sliced onions and saute for a minute.
Add chopped vegetables ( cabbage, carrot, beans, capsicum ) and stir fry on high heat.
Add pepper powder and saute gently. Do not reduce heat when tossing vegetables. Otherwise, the moisture from vegetables makes the fried rice mushy.
Now add in the chilly sauce, soya sauce, and gently mix the vegetables.
Now add rice vinegar according to taste and mix gently.
Finally, add freshly cooked or leftover rice and toss well, holding the handle of the pan.
Simple, delicious vegetable fried rice is ready to serve.
I served it with cucumber raita and tomato ketchup.
