Easy Lemon Rice Recipe is an easy and quick recipe to make with fresh boiled or leftover rice. This recipe needs only lemon and regular ingredients for tempering available in your pantry. It is one of the frequently made rice in all South Indians households for breakfast, lunch and is best for lunch boxes.

This rice is so simple to make for any newbie to begin. I bet all will nail it to perfection at ease. Yes, fresh or leftover rice and lemon are all need for this recipe. To add some extra crunch to the rice, you can add peanuts and cashew nuts. Here, I generously added peanuts as my family loves it most.

How to make South Indian Style Lemon Rice

If you have leftover rice, it is perfect for this recipe. You can cook fresh rice and make it also. It is purely optional! Squeeze lemon juice and add turmeric powder and salt to it. Keep it aside. In a kadhai or pan, add gingelly oil on low, medium heat. You can use any oil according to your taste. Add fresh peanut and fry for two to three minutes. To it, add mustard seeds, urad dal, channa dal, slit green chilies, curry leaves, and asafoetida powder and wait until it crackle. Then, add lemon juice mixture and let it boil for few seconds, and remove from heat. Now add either leftover rice or pre-cooked rice and gently mix until it is combined well. Viola, it is done! Yep! a super easy and exotic recipe to make.

Squeeze one lemon juice and add turmeric powder and salt and keep it aside.

In a kadhai or pan add sesame oil on low medium heat. Add peanut aka groundnut and fry until it is golden brown. In the same kadhai, add mustard seeds, urad dal and channa dal and wait until it starts to crackle.

Now add slit green chillies, curry leaves and asafoetida powder and stir for few seconds.

Add lemon juice mixture and stir well. Let it boil for only for few seconds. Switch off the flame.

I have used 4 cups of leftover rice. You can use freshly cooked rice too. However, any rice is perfect for this recipe.

Gently mix until the rice combines well with the lemon mixture. Check salt and add according to your taste.

This mild, tangy, delicious South Indian lemon rice is perfect for any day, occasion, lunchbox and, also perfect during travel.

Serving Suggestions for Easy Lemon Rice Recipe

You can serve lemon rice with chips and also any chutney like coconut or mint chutney. My preference is potato fry and, it the best combo comparing to any vegetables. Some prefer to eat with pickles and papadums too.

Storing Suggestion

As I mention above this, lemon rice is perfect for travel. So, you can store for up to two to three days at room temperature. Lemon avoids the rice going stale and keeps it fresh.

Notes

You can use any variety of rice but avoid using any sticky rice varieties. When cooking rice, let it not be mushy. Mushy rice will not work for this recipe so cook rice to perfection.

Temper the ingredients to perfection. Simple and day-to-day regular spices are all needed for tempering this recipe. Adding nuts is optional. Peanut aka, groundnut and cashew nut goes well for this rice.

You can use green chili or dry chili for this recipe.

If sesame oil is not available, you can use peanut oil, sunflower oil, rice bran oil, etc.

Curry leaves is must for this recipe. It adds flavour to the lemon rice.

  • 5 cup Rice (leftover cooked rice)
  • 4 tablespoon Lemon juice (add according to your taste)
  • 3 tablespoon Sesame oil
  • 3 Green chilli
  • 1 teaspoon Mustard seeds
  • 1½ tablespoon Urad dal
  • 1½ tablespoon Channa dal (bengal gram)
  • ¼ cup Peanut aka Groundnut
  • 2 sprig Curry leaves
  • ½ teaspoon Asafoetida(hing)
