Easy spicy potato fry is a quick dish to prepare in just a few minutes. Who says no to potatoes? From toddler to aged person, all would love to eat without any fuss. Moderate eating of potatoes is good and can include in the diet regularly. There are many variations of preparing potatoes. Today, I’m sharing a regular, simple South Indian-style preparation. This recipe needs a handful of ingredients available in your pantry.

This spicy potato fry goes well with rice, rotis, and any flatbreads. It is a quick dish to prepare for a quick lunch or dinner. And this potato fry base is used for stuffing for samosa, Frankie, cutlets, etc., and is perfect for an evening snack.

Variations in making Spicy Potato Fry

There are many variations in making this simple potato fry. You can boil potatoes or dice potatoes into small cubes for frying. Here, I boiled potatoes and made this simple spicy fry. Adding onion, tomato, garlic and tempering of spices is purely optional. Furthermore, you can add spice powder of your choice.

How can you make Easy Spicy Potato Fry

Firstly boil potatoes and peel the skin and keep it aside. In a wok add oil on a low medium heat. To it add mustard seed, urad dal, bengal gram and fennel seed and wait until it starts to splutter.

Add chopped onion, green chillies and curry leaves and saute until it turns translucent.

Now add chopped tomatoes and continue to saute until it is mushy.

Add, turmeric powder, chilli powder and salt to taste and mix well until it is combined well.

Add chopped boiled potatoes and gently mix and make sure the potatoes are well coated with spicy masalas.

Roast the potatoes until it turns crisp on the edges. However, if you want more crispy, you can roast extra few minutes on low heat.

Easy spicy potato fry is ready to devour with any variety rice, rotis, sambhar rice, rasam rice and the list is endless.

Non-stick pan or heavy bottomed wok

Ingredients
  

  • 6 potatoes (medium-sized)
  • 1 onion (medium-sized)
  • 1 tomato (medium-sized)
  • 2 green chillies
  • 1 curry leaves (sprig)
  • 4 tablespoon oil sunflower oil or canola oil (purely optional)
  • 1 teaspoon mustard seed
  • 1 teaspoon urad dal
  • 1 teaspoon bengal gram
  • 1 teaspoon fennel seed
  • ¼ teaspoon turmeric powder
  • 1 tablespoon chilli powder (add according to your taste)
  • ½ teaspoon salt (salt to taste)
