Banana Blossom Vada/Vazhaipoo Vadai

The Banana Blossom Vada, also known as Vazhaipoo Vadai, is a traditional vada recipe that includes banana blossoms. It is the perfect snack to enjoy with coffee or tea.


This recipe has been passed down through generations in my family, from my great-grandmother, and is followed exactly by everyone in my family.

Cleaning the banana blossom, also known as Vazhaipoo, can be a bit tedious, but the delicious taste of the Vadai makes it well worth the effort. The unique taste, flavor, and crispness of this dish are indescribable unless you’ve experienced eating this delightful delicacy.

When I was small ,My Amma used to preach about the benefits of this Banana Blossom while removing the pistil and calyx in it and it is still fresh in my mind and got registered that it is good for young girls and ladies. I loved to clean the flower but hates the stain and gooey feel .

This Vadai is made out of adding both Bengal Gram and Roasted Bengal Gram with spices like cinnamon,clove, fennel seed and dry chillies for heat. As regular vadai, chopped onion ,curry leaves and coriander leaves is added to the batter and salt to taste.

Let’s see how to clean Banana Blossom flower followed by the Recipe.

Separate the bracts of the Banana Blossom as shown.
Cleaned Banana Blossom Florets.
In a bowl of water add ½ teaspoon salt and little curd or buttermilk and mix well , This helps florets from darkening.
Cook the chopped florets by adding two pinch of turmeric powder for 5 minutes.
When it is cooked drain in a colander and keep it aside. Now it’s ready to cook as per choice. Lets see how it transform into Vadai.
Banana Blossom Vada / Vazhaipoo Vadai
Preparation Time : 30 mins
Cooking Time : 20 mins
Serves : 10
INGREDIENTS

Banana blossom – 1 ( medium size)

Bengal Gram – 1 cup

Roasted Bengal Gram – ½ cup (powdered)

Dry Chillies – 9

Cinnamon stick – ½ inch

Cloves – 3

Fennel seeds – 2 tsp

Onion – 2 medium size ( finely chopped)

Curry leaves – 1 handful

Coriander leaves – 1 handful

Salt – ½ teaspoon or to taste

Procedure

Soak Bengal Gram with dry chillies for 1 hour.

Meanwhile clean and prepare Banana Blossom .

Ingredients for grinding Vada Batter.

In a dry Electric mixer jar add roasted Gram dal ,cinnamon ,clove and Fennel seeds and grind it to fine powder and keep it aside.

In the same jar add soaked Bengal Gram little at a time with dry chillies together and grind coarsely without adding water.

After grinding dal batter, add boiled Banana florets and pulse twice or thrice.

After pulsing the florets has to be minced in this way

To the Dal batter add minced Banana Blossom Florets,chopped onion, curry leaves and coriander leaves.

Finely add powdered roasted Gram dal with salt to taste.

Gently mix until it is well combined.

Make equal round balls out of the batter .Make sure not adding even a teaspoon of water.

Heat oil in a heavy bottomed kadhai on medium heat and flatten round dal batter to vada shape and fry.

Fry Vadai on low medium heat to achieve the utmost crispiness of vadai with golden brown colour.

Ingredients
  

  • 1 Banana blossom(medium sized)
  • 1 cup Bengal Gram
  • ½ cup Roasted Bengal Gram(powdered)
  • 9 Dry Chillies
  • ½ inch Cinnamon stick
  • 3 Cloves
  • 2 teaspoon Fennel seeds
  • 2 Onion(medium sized)
  • 1 handful Curry leaves 
  • 1 handful Coriander leaves 
  • ½ teaspoon Salt  to taste
  • ½ litre oil for frying
