Star Cinnamon Wheat Bread/ Pull Apart Bread is the best beautiful bread for any holidays! Especially during Christmas celebrations, this bread would be a showstopper among friends and relatives. Buttery layer with a sprinkle of cinnamon and cane sugar filling spreads a beautiful aroma that invites everyone to take a bite! This bread is a whole wheat flour bread is so easy to make and needs regular bread baking ingredients.

Can we make this bread in all-purpose flour

Yes, you can make this bread in all-purpose flour and also 50:50 ratio of both all-purpose flour and wheat flour.

Variations in filling

The cinnamon filling here I made is the regular filling for any rolls and braided bread. You can substitute any filling both, sweet or savoury filling to the bread. There is an umpteen number of fillings like fresh fruit filling, dried fruit filling, caramel nuts filling, etc. The best savoury filling which, is my choice, is mashed potatoes with cottage cheese(paneer). Vegetables like beans, carrots, bell peppers, caramelized onions also go well for the filling or, a chunk of cheese with fresh herbs is the best and loved filling by all.

How to make Star bread/ Easy Cinnamon Wheat Bread/ Pull apart Bread

Lets see the easy steps with step by step pictorial preparation below.

In a wide bowl, add lukewarm milk. To it add instant yeast, sugar and salt.

Gently mix the yeast mixture until it is completely mixed. Now add softened butter and mix well.

Add wheat flour a little at a time with baking powder and mix well.

Mix until it forms a soft dough. Transfer the dough to a lightly floured kitchen counter.

Knead well using the stretch and fold method. Knead for 15 minutes until the dough is soft.

Take a small round ball and stretch the dough (WINDOW PANE TEST). The dough should not break and be elastic. Now the dough is perfect for proofing.

Oil a bowl and place the dough and brush some oil on the dough.

Cover with a kitchen towel and proof the dough for 2 hours.

Meantime mix cinnamon powder with cane sugar and keep it aside.

The dough is risen well. Punch and deflates the gas.

Flatten the dough and divide into four equal rounds.

Take one dough ball and roll into a 9” diameter circle and trim trim the edges. Place the round disc on a prepared baking tray lined with parchment paper.

Now spread 1 tbsp of softened butter with a silicon brush all around leaving the edges.

Sprinkle cinnamon sugar mixture as shown and cover the second layer. Repeat the same with other two round dough balls. Three layers are with cinnamon spread and finally roll the fourth dough and cover it.

How to divide the dough into 16 equal parts

Use any round shape(I used a round cookie cutter) to make an impression in the centre.

This is the centre of the star bread, which helps to make 16 equal slits across the rolled round dough. With a help of knife divide the dough into four equal parts as shown.

Then divide it to eight parts.

Finally make eight more slits as per the picture shown.

Now, with gentle hands twist the adjacent two slits and pinch the edges, which helps to form a beautiful star shape. A short video clip is attached in the recipe. Do watch it carefully.

Likewise finish all the slits and seal the edges well.

Cover the star bread dough with a kitchen towel for second proofing. It almost take 30 minutes.

Meanwhile preheat oven to 200 *C. After 30 minutes again check the shape of the star shape and pinch the edges perfectly. Finally brush the dough with milk and bake for 15 to 17 minutes until you achieve golden brown Cinnamon Star Bread.

Apply some butter immediately on the baked bread to give glossy and softness to the bread. Beautiful Cinnamon Star Bread is perfect to devour this Christmas holiday or any holidays with lovely cinnamon flavour. Enjoy it with cup of coffee or milk.

Notes

Firstly ,first proof is important to allow the yeast and gluten to develop and it helps in enhancing the flavour of the Bread.

And the second proof is also important to get a high risen airy and light Bread Loaf.

Do not over- proof the Bread dough as it result in an un pleasant yeast flavour.

Do not over – proof at second stage as it end up with a Bread loaf where the crust separates from the Loaf.

Always buy good branded fresh yeast.

Home made Bread will stay fresh for two to three days only.
