Vegetable Paneer (cottage cheese)Curry is one of my favourite curry among all curries. My love for vegetable curry is endless and ,I love vegetable Paneer( Cottage Cheese) curry so much and make it frequently as it consumes less time and requires few ingredients available in pantry. There is no specific vegetables is must to make this dish except for the Paneer. I added Onion and Tomato puree to thicken the gravy.Basic masalas powders along with ginger garlic paste enhance the Curry flavourful and tasty.
I make this dish both dry and semi thick in consistency. Today I made it semi thick which goes well with all types of Indian Flat breads ,hot steamed rice or any Puloas. I added Potatoes and peas with Paneer whereas you can add mushroom, Cauliflower,Broccoli or any vegetables you prefer. To make it simple and easy recipe and with the available vegetables made this yummy combo for Roti for lunch as a semi thick curry . Lets jump to this easy recipe with step by step preparation.
How to prepare Mixed Vegetable Paneer (Cottage Cheese) Curry with step by step preparation.
Get ready with all the vegetables and masala powders. In an Electric mixer grinder add chopped onion and Tomatoes and grind to puree.
In a heavy bottomed kadhai heat oil on a low flame and add ginger garlic paste and saute until raw smell disappear. To it add all the masala powders and fry for few seconds stirring continuously. Now add onion tomato puree and cook until it starts to boil.
Add chopped potato and peas with little water and let it cook for few minutes with covered lid.
Now add Paneer and gently mix. Do not over mix as Paneer will crumble to pieces. Add salt to taste.
Let the curry cook for few minutes and when the oil starts to float above garnish with a handful of coriander leaves.

Let the Tomatoes be ripe .
Puree the onions and Tomatoes well.
Do not fry Paneer as I feel cottage cheese get seal after frying and the salt and masalas would not be absorbed well.

- 4 tomatoes
- 3 pinch turmeric powder
- 3 teaspoon HomemadeSambhar Powder
- ½ teaspoon garam masala powder½
- ½ teaspoon curry powder
- ½ teaspoon cumin powder
- 1 tsp GingerGarlic Paste
- ½ teaspoon salt ( to taste )
