These Brookies are decadent with a crispy top and cakey inside. No one can stop eating one and asks for more. It is an easy recipe to whip in few minutes.
What is a Brookie?
Brookie is nothing but a brownie and a cookie in one single recipe. The combination texture of a crispy outside and cakey inside is a perfect Brookie.
Who can say no to chocolate in any form? My love for chocolate and vanilla never ends. My followers now know it very well. I love making and eating chocolate as a cookie, a brownie, or a brookie. INGREDIENTS NEED FOR THIS RECIPE
- all-purpose flour
- sugar
- egg
- semi sweet chocolate
- cocoa powder
- vanilla extract
- baking powder
These are the ingredients needed for this recipe. All are very much available in every pantry except for the chocolates.
INGREDIENTS SUBSTITUTION
- You can use whole wheat flour or a 50: 50 ratio of all-purpose flour and whole wheat flour.
- The essential ingredient is chocolate. Always use good quality chocolate for baking. I always prefer using semi-sweet chocolate and adjust the sweet according to taste. You can use dark chocolate too.
- Use a quality cocoa powder that gives flavour and colour to the brookie.
- Next comes the sugar. I used caster sugar for this recipe. You substitute with brown sugar which, also adds colour and flavour to the brookies. I would recommend 50:50 of white sugar and brown sugar for this recipe.
- The most frequently asked question is the egg replacement. I do answer for some bakes if I genuinely tried for the particular recipe. But for this recipe, I can give a substitute which I had tried. You can use a flax egg. Flax seeds are called flax eggs. To substitute for one egg, take THREE tablespoon of room temperature water with ONE teaspoon of ground flaxseed powder and mix well. Let it sit for 20 minutes. Use this slimy flax egg mixture to replace an egg.
Lets see step by step preparation of the Brookies
In a microwave-safe bowl, add butter and semi-sweet chocolate and melt it for 10 to 15 seconds until it turns smooth and shiny. You can follow double boiler method for melting chocolate and butter.
Stir well until you do not find any chunks of chocolate. Let it cool.
Meanwhile beat egg and sugar until frothy. and sugar is completely dissolved.
Now add cooled chocolate to the egg mixture, vanilla extract and whisk well for a minute until it is well combined.
Sift (all-purpose flour, coca powder, baking powder and salt ) in the dry ingredients and gently fold until just combined.
Mix it gently with a spatula until the flour mixture combines well. Initially, the dough mixture will be slightly thin. Just leave the brookies dough for 15 to 20 minutes on the kitchen counter. The dough will start to thicken and, you can handle the brookie dough well.
Meanwhile, preheat the oven to 180 C. Use a cookie scoop to get an evenly sized ball. Place it on a non-stick baking tray and bake it for 13 to 14 minutes.
Do not bake for more than 14 minutes. The cookies will be soft from out of the oven. Allow them to cool on the baking tray until it is completely cool. Then remove from the tray and transfer to a cooling rack and dust some icing sugar before serving. Store in an airtight container.
How to serve Brookies?
These brookies will be delicious as it is. You can serve with a cup of milk or coffee as per your preference. It is perfect as a snack for kids snack boxes and can serve as a dessert with a scoop of ice cream.
How to store Brookies?
Brookies will be fresh for more than fifteen days on the kitchen counter. You can bake big batches ahead of time for upcoming parties and holidays and store them in a freezer. Just stack the brookies in ziplock bags and freeze them.
Can we store brookie dough in Freezer?
Yes, you can store brookie dough in the freezer for up to three months. Place the brookie dough in a ziplock bag and store it in an airtight container. When you plan to bake, bring the brookie dough to room temperature and bake.

Use good quality chocolate and cocoa powder. I used semi-sweet chocolate and, if you are a great fan of dark chocolates, you can use that too.
If you want to bake immediately and have no time to wait, you can refrigerate the brookie dough for ten to fifteen minutes for the dough to thicken.
