Valentine’s day macarons is easy if you follow all the tips given in the post. It is a delicious dainty cookie loaded with flavours of raspberry and chocolate flavour.
Valentine’s day macarons/ Raspberry macaron for valentine is more special than any other day. I initially planned to bake a heart macaron, which I tried and achieved many times. But, due to lack of time, I couldn’t stick according to my wish. So, I went for a regular round macaron with a valentine touch of colour and flavour.
Valentine’s day belongs to all ages who celebrate love, friendship, and admiration. Every year on 14th Feb people celebrate this day with lots of love and gifts like chocolates, roses, sweets and many more. And today, my go is for my ever-loving raspberry chocolate macaron. The shells are flavoured with raspberry and sandwiched with homemade strawberry jam and melted chocolate.

Pro tips to achieve perfect Macarons
This valentine day macaron/ Raspberry chocolate macaron is the second macaron recipe in my blog. The first was a French Macaron Recipe with Mango flavoured shells sandwiched with toasted coconut and mango jam. Please take a few minutes to read that post here for all the pro tips and variations given in detail.
Let’s see step-by step preparation of Valentine’s Day Macarons
Separate egg whites and add in a wide bowl. Make sure the egg whites are at room temperature.
Beat egg white in an electric hand beater until frothy with a pinch of cream of tartar. Add caster sugar little by little until it is completely dissolving. Maintain the speed of the hand beater to medium level during this process.
Beat egg whites for 8 to 10 minutes until you get a stiff, stable shiny meringue. Now add red colour gel as per your colour requirement.
Whip the meringue until the colour is evenly mixed. You can add the colour in the meringue, or else you can add it after adding the almond meal too. Make sure you don’t over mix the meringue batter.
Sift Almond meal along with icing sugar to discard any lumps. Now add the Almond meal icing sugar mixture to the meringue and fold gently.
To it, add raspberry flavour and fold the macaronage gently.
Fold until you reach the figure of eight consistency as shown in the picture. (refer notes).
Transfer the batter into a piping bag fitted with a round tip.
Pipe 1.5-inch rounds on a tray lined with parchment paper. Now tap the baking tray three times to pop any air bubbles trapped in the macaron shells. Use a toothpick to break the air bubbles to get a smooth top macaron shell.
Bake at 125 deg C for 17 to 20 mins ( i bake in a microwave convection oven). Check the shells every 30 seconds after 17 minutes. If the shells stuck to the parchment paper, wait for some more seconds to bake. When the baking process is complete, let the macaron shell cool thoroughly
Let’s see how to make the filling for the macarons.
Melt chocolate for 10 to 15 seconds in microwave mode. You can melt chocolate in the double boiler method. To it, add raspberry flavour into the melted chocolate. Adding flavour to the chocolate is purely optional.
Assembly
Before filling, pair the macarons according to their sizes. Then fill the macarons with a blob of Homemade Strawberry Jam and pipe chocolate around the jam, as shown in the picture.
I gave an edible silver stroke on the macarons to add an extra touch to the Valentine macarons/ Raspberry chocolate macarons.

How to store Macarons?
Store macarons in an airtight container, and it stays good for six to seven days at room temperature. If you make big batches, keep them in the fridge, and they stay fresh for up to seven weeks.

- 50 g Homemade Strawberry Jam
