Soaking the dry fruits in Alcohol is the first sign of welcoming Christmas. Has your Christmas prep started? If not, “better late than ever”!

If you want to enjoy your Christmas with Home made Christmas Cake just follow this recipe which is going to be in three part series. Soaking the Dry fruits, Making of Treacle and lastly the most awaited Christmas Cake Recipe.

Soaking the dry fruits

The process may look laborious but worth to taste this Delectable moist spice infused alcohol soaked rich fruit and nut Christmas Cake.

The first step to making this yummiest Cake among all, is soaking the dry fruits. Traditionally dry fruits are soaked in Rum. I usually soak in Red wine and the outcome is same as soaked in Rum.

Those who want to avoid alcohol can soak the dry fruits in orange juice or boil and use for the cake.

Combination of dry fruits for soaking is individuals choice. I have used chopped Cranberries, Raisins, Black currant, Dates and Tutti Frutti.

Red Wine is my choice to dunk the dry fruits. Some prefer soaking nuts along with dry fruits. I prefer to add the nuts before baking to have the crunchy feeling.

Step-by-step preparation of soaking the dry fruits.

Get ready with all the ingredients. De seed Dates and chop into pieces. Chop cranberries into small pieces.

In a dry bowl add all the dry fruits as shown.

Add Red wine to the chopped dry fruits and mix with a dry wooden spoon.

In a clean dry ,air-tight glass jar fill the dry fruit mixture to half leaving half empty space. Do not fill up to the brim as the fruits soaks and occupies the empty space.

How to store the soaked dry fruits?

Close the jar tightly and store it in a cool, dry place away from sunlight. Every 2 to 3 days, mix the soaked fruits with a dry spatula. 

If the fruits are dry, add a ¼ cup of wine and mix it well. Repeat this process until you decide to bake The Delicious and Yummy Rich Fruit and Nut Christmas Cake.

Use only Clean Glass jar for soaking fruits.

Every 2 to 3 days stir the soaked fruits with a wooden spatula. Do not use metallic spoon.

If the fruits seems to be dry add ¼ cup of wine and stir.

Ingredients
 
 

  • 150 gm cranberries
  • 150 gm black currant
  • 150 gm rasins
  • 300 gm tutti frutti ( red & orange )
  • 150 gm dates ( deseeded )
  • 2 cups red wine

  • In a clean dry ,air-tight glass jar fill the dry fruit mixture to half leaving half empty space. Do not fill up to the brim as the fruits soaks and occupies the empty space.
  • Seal the jar well and store in a cool ,dry place away from sunlight. Every 2 to 3 days, give the fruits a mix and if it is dry add ¼ cup of wine and stir once again with a clean wooden spatula. Continue this process until you fix a date for to bake The Delicious Yummy Rich Fruit and Nut Christmas Cake.

    Is there a point where soaking fruit has been soaked too long? What is the longest any of the fruit should be soaked?

      Soaking dry fruits helps to enhance the flavour of the cake.I Soak for 3 months or more and use for other recipes too.. The longer the better is my choice..Happy Baking????
