Idli milaga podi is a best condiment for South Indian breakfast like Idli ,Dosa , Rava Dosa,Masala Dosa,Uttapam etc. This simple easy recipe consists of Dals,Dry chillies,Sesame seeds, Asafoetida and salt to taste. It takes only few minutes to prepare this delicious Podi . Here I’m sharing my Grand Mother’s recipe which is less spicy than my recipe. I always like to tweak the recipe by adding different Dal each time to the Idli Podi recipe which I will be sharing .
Every household has their own variations of this Recipe. This Idli podi is always a great alternate for Sambhar or Chutneys for Idli or Dosa. Just spend few minutes to prepare,grind to a coarse powder and store it in an airtight container .Whenever,you want to consume just mix it with oil ( individuals choice of oil) or melted Ghee and relish it . I always love to eat with hot steamed idli and Kal Dosa ( it is nothing but dosa made it thick and small). My Hubby loves to have Idli Podi /Idli milaga Podi /Tiffin Podi with Hot steamed Idli . Soaking Idli with Idli Podi and oil is perfect for lunch boxes. Lets jump to the recipe with step by step preparation.
Preparation Time : 5 mins
Roasting Time : 15 mins
Servings : 1/2 kg (depend on the usage)
Urad Dal – 1 cup
Channa Dal – 1/2 cup
Tur dal – 1/4 cup
Dry Chillies – 15
Sesame seeds (Black) – 1/2 cup
Asafoetida – 1 tsp
Salt – 1 teaspoon or to taste
Get ready with all the ingredients .
In a kadhai dry roast urad dal separately on a low medium flame until it changes light brown in colour and keep it aside.
Same way dry roast Channa dal until raw smell disappear and turns light brown and keep it aside.
Dry roast Tur Dal for a minute and keep it aside.
Now dry roast dry chillies lightly before it completely changes it colour and keep it aside.
Now switch of the gas flame and add Sesame seeds and toss well until it starts to splutter and keep it aside.
Finally add Asafoetida and roast for few seconds and keep it aside.
Let all the roasted ingredients cool completely .
In a clean dry Electric mixer jar grind Dry chillies to coarse powder.
To it add roasted Dal and grind to coarse powder.
Add salt to taste and pulse for few seconds until salt is evenly mixed in the mixture.
Now transfer on to a plate and let it cool for few minutes. Store it in an airtight glass jar or steel jar and it stays fresh for a month or two. Use good quality ingredients.
Dry roast each ingredient separately .
Let the roast Dal cool completely before grinding.
Store it in an airtight container or steel jar and use dry spoon for serving.
