Mangalorean Chicken Ghee Roast is an Indian dish of chicken native to Mangalore and Udupi region. You can prepare this recipe in two variations dry or semi gravy. One of my friend who is from Kerala was once exchanging chicken recipes , she gave an intro about this dish .
To my surprise, this recipe needs no onion or tomatoes. I googled and found there were many recipes with different variations but, I tweak the recipes according to my taste.
Ingredients need for Mangalorean Chicken Ghee Roast
This is a spicy,lip smacking and delectable dish and no one can say no for this dish . This recipe needs Ghee and whole spices roasted dry and grind to fine powder and added to chicken . Both the ingredient elevates the taste of chicken . Ghee and fresh roasted ground masalas compliment well for this Ghee chicken roast and elevates the flavour of the dish rich and drool worthy.
Some prefers to cook this recipe boneless or with bone. Myself prefer to cook with bone as it gives more flavour to the dish. First marinate chicken pieces in curd for few minutes. Dry roast spices and grind to fine masala powder. In a pan add ghee and chicken and saute for few minutes. Then add Aromatic masala powder and mix well .When ghee starts to float on the surface add little water and cook . After few minutes it is done!
As Mangaloreans use jaggery in place of sugar, this recipe calls for little jaggery and tamarind which balance the taste well with both sweet and tangy flavour.
This Mangalorean Chicken Ghee Roast/Semi gravy pairs well with Neer dosa(Mangalore delicacy),Flat breads steamed rice , idli ,dosa, appam and string hoppers. All has unique taste and preference and I BET this dish Satiate all.
Lets jump to the recipe with step by step preparation of Mangalorean Chicken Ghee Roast
In a glass bowl add chicken,turmeric powder,curry leaves and salt to taste and mix well. Let it mariante for 15 mins.
Get ready with all the ingredients for roasting.
In a pan,add all the whole masala and dry roast on a medium heat for three to four mins and keep it aside.
In a mixer add the roasted spices with kashmiri powder, ginger, garlic, sambhar powder and tamarind plup and grind to coarse paste.
Heat a pan with ghee, add marinated chicken and saute for 3 minutes. Wait chicken to become firm.
Add the ghee roast masala mixture to the chicken and mix everything together. Cook the chicken on a medium heat and wait ghee to separate and reaches the surface.
Add half cup of water and cover the lid and cook chicken for 5 more minutes.
Add in the powdered jaggery , and salt to taste and mix well and check for seasoning. Switch off flame and serve hot with any main dish of your choice.

Dry roast whole spices on medium heat.
Use ghee (clarified butter)for this recipe.
I have used home made sambhar powder in this recipe. You can use coriander powder and chilli powder in 2:1 ratio. Kashmiri chilli powder is also added as recipe calls for it.
MANGALOREAN CHICKEN GHEE ROAST

- 750 gm chicken ( chicken drumstick )
- 3 tablespoon ghee
- 1 tablespoon jaggery powder
- 2 tablespoon tamarind ( thick pulp )
- 2 teaspoon HomemadeSambhar Powder
- ¼ cup curd (or ) yogurt
- ¼ teaspoon turmeric powder
- ½ teaspoon salt ( to taste )
- 3 sprig curry leaves
Ingredients for Dry Roast
- 2 teaspoon coriander seeds
- 2 teaspoon peppercorns
- 1 teaspoon cumin
- ½ teaspoon fennel seed
- ½ teaspoon fenugreek seed
- ½ inch cinnamon
- 3 cloves
- 4 garlic clove
- 1 inch ginger
- 2 teaspoon kashmiri chilli powder
Instructions
