Easy and simple grilled chicken is one of the favourite dishes of all chicken lovers. It is one of the best appetizers attracts guest in all parties. This chicken recipe I’m sharing is straightforward and easy. For this recipe, all you need is chicken and few masala powders readily available in your pantry.
Grilling is one of the best, healthy and simple ways of cooking recipes. You can grill any meat or vegetables with the same spice mix by marinating for a few hours. Just learn the tips and tricks to grill on all gadgets which, is easy and comes out as a practice.

For grilling, experts recommend chicken thighs because they are the moistest part of all. But chicken leg, breast, and wings are equally good. Yes! The bones and skin help to insulate the meat from overcooking and, they make it taste much better. So, you choose whichever part of chicken is available.
Tips and Tricks
If you have less time, go for boneless chicken( breast piece) as it cooks fast than leg and wings. Pounding boneless chicken breast piece for a minute reduce cooking time
Score chicken legs with a knife evenly. It helps the marinade to absorb well and flavourful after grilling.
Adding curd or yogurt helps to tenderize the chicken meat and results in juicy moist grilled chicken.
Brush oil on the chicken pieces, which helps to avoid meat sticking to the grill or pan.
The Seasoning used for grilling chicken
You can season any spice according to your palates preference. There is no definite spice mix for this recipe. Here, I’ve used
- Chilli powder
- Coriander powder
- Turmeric powder
- Ginger Garlic Paste
- Curd
- Lemon juice
- Salt
Variations in spices
You can use other spices like cayenne pepper, fresh ground pepper, paprika, garlic powder, onion powder, dried thyme, dried basil, etc. Furthermore, you can add readymade grilled spice mix and sauces for the marinade.
What are the ways to grill chicken at home
We don’t need a big chicken grill machine as we see in restaurants. The best and easy way to grill chicken is, firstly, on the stovetop using a frying pan, OTG (oven toaster grill) oven, microwave convection oven, or portable outdoor charcoal grill.

How to season the chicken before grilling
Clean the chicken well and pat dry with the kitchen towel. Then score the chicken thigh or leg with a knife. The slit has to be uniform and, it should help to hold the seasoning well.
Then, prepare the marinade according to your taste. Rub the marinade on the chicken pieces well. Let it sit for hours. The more marinating time, the taste of the chicken would be great.
I usually marinate the chicken the previous day and freeze it. Before grilling, an hour or two will bring it to room temperature and grill.
Step-by-step preparation of easy and simple grilled chicken
In a plate or bowl add chilli powder, coriander powder, salt, curd and lemon juice. Mix well until, you gat a fine paste.
Rub the paste as shown in the picture.
Let it marinate for two to three hours. If planning to grill the next day, transfer the chicken into a bowl and cover it with a cling wrap and refrigerate overnight
I grilled in my microwave convection oven on grill mode. Before grilling, brush oil (flavourless oil) on each piece and grill for 13 to 15 minutes. Then flip the chicken onto the other side and grill for another 15 minutes. After grilling let the chicken rest for 5 minutes. Serve with onion rings and lemon wedges.
How to serve grilled chicken
Serve the grilled chicken as an appetizer with mayonnaise, sweet chili sauce, or any sauce as your preference or serve as a side for any flavoured rice and flatbread. Squeezing lemon before serving adds a mild tangy taste to the grilled chicken.
NOTES
- After grilling, allow the chicken to rest for 5 to 10 minutes before serving.
- Grilling drumsticks, thighs, breast, and wings varies in time. So do have an eye if grilling in OTG or Microwave convection oven.
